silver has changed from Licorice to Liquor prior to making chicken and after its NOT the Licorice flavor BUT its a replacer.

Silver No licorice flavoring? Wow, I thought it was one of the "must have-locked in" additions. cfc With my next cook session I should know for sure if licorice is or is not required.

silver has changed from Licorice to Liquor prior to making chicken and after its NOT the Licorice flavor BUT its a replacer. I think that was Alton Brown. He has Bourbon listed as an ingredient. As for me, I'm an occasional beer drinker.

When my wife and I get back to deep frying chicken I may split the 'Ultimate Deep Fried Chicken 2' recipe and add 0.25 grams of Anise Seed to half of it. That way I should be able to definitively nail down the need for a background hint of licorice.

When I get to the restaurant this evening, I will Pull out my Binders and double check the Tweaking done when we made the Recipe. When we are trying. New Recipes or Flavor Profiles, For All Safety and Health measures accurate recording of ingredients are documented and placed in a Binder for reference, That we can source if required.
I know we cooked 2 cases of wings which was approximately 40 to 50Lbs of wings that night which meant that 40 Fry's were done minimal.
Ultimate Deep-Fried Chicken 2 (January 18, 2023)
200g. Pastry Flour 24.0g. Salt
----- (seasoning Bag is Below This Line) ----
5.00g. Salt 5.00g. MSG 1) 2.50g. Black Pepper (Coarse) 1) 2.50g. White Pepper 2) 1.50g Coriander Seed 3) 1.00g. Ginger 4) 0.75g. Sage 5) 0.50g. Cayenne Pepper 6) 0.25g. Savory 7) 0.25g Nutmeg 8) 0.25g. Clove 9) 0.25g. Mace 10) 0.125g. Marjoram 11) 0.125g. Garlic powder
Just By reviewing the Recipe on Posting and NOT even viewing the binder I recall a few tweak
Ginger and Sage amounts were increased, Onion Powder was added and Celery Salt Added
I Do Not recall which item was added as a Number 11 Ingredient as WE never count Celery, Garlic, Onion as the 11 Herbs and Spices so I would have added a No. 11 Item
Based On NOT seen a HIGH impact Herb It would have been either Rosemary, Thyme or Oregano
I also recall we also would have increased the Overall season amount to Flour as you ONLY used 10.25 g to 200g Flour (WE had to increase the seasoning as NEW oil Sucks flavoring from the item cooking until it has usually 12 to 15 batches made
Notes above were from recollection with ONLY 1 cup of coffee under the Eye lids
