we were asked if we ever tried making a mix from Pre-Blended spice bottle similar to the below list
Black Pepper, White Pepper, M.S.G.
BBQ Seasoning Chili Powder Curry Powder, Italian Herb Blend Pickling Spice
My answer was yes and the ingredient list from the above became lengthy when picking out the spices from each bottle and when it was all rested it looked like a Bragg Seasoning spice list with 27 items in the mix.
We Did try adding the Braggs Mix to Flour and salt and pepper before and on another occasion made a Old Bay Seasoning chicken BOTH were OK wings.
What we Found worked 1000% times better was breaking the list into 3 different spice layers
Brine ~ Marinade Spice Mix
Milk & Egg Warsh Spice Mix
Flour Seasoning Spice Mix
The Flavor's were so layered it was unreal / BUT a Mastermind of work to make. The Flavors ARE amazing and ONE of the best Chicken Wings and Chicken Breast Ever.
We have Gone back to the Drawing Board with the Same type of Trial and Cooking attempt with the though go for AROMA
We limited the Flour Seasoning mix to 11 Spices and Herbs BUT ALL ELSE GOES
YES we are attempting to Make a Original KFC Aroma and Softer Coating texture and a Crispy version BUT Extra Moist Meat melting Breast and Thigh.
WE took OLD OLD ingredient list from Sexton, Bee-Brand / McCormick's, Durkee's, Tone's Bro Pre-Made spice Tins to make the List below we DID NOT scale back ant items just went with what they had listed and made a list. 29 items were put into the Hat.

Because we used so many spices and layered We ONLY USED a 6% mixture of spice to Flour Ratio AND LOWER salt then EVER.
FLAVOR was AMAZING / AROMA was More then Amazing
" what did we learn we can drop some items which Do Not appear to give a flavor profile or are lost in the combinations "
We have sourced a Chicken processor who is willing to Needle Inject Marinade Brine for 500 LBS of chicken with our Mix we Provide and vacuum seal the Packages.
for our next attempt.
We are looking to switch to a Water and Seasoning Bath instead of the Milk and Egg Warsh, and use Powdered Milk and Egg. CLEANER PROCESS(HAVE NOT DESIDED METHOD)
WE know C.H.S. Brined the original chicken as he Professed he carried the Brined chicken in a Ice chest to locations as many locations DID NOT serve Chicken in the Day.
he also carried a 50lbs Lard Tin with Seasoned Flour to locations
AGAIN WE DID NOT INTEND ON ONLY USING 11 Spices and HERBS we intended on using 11 Pre-Mixed Spice Tins or Bottles style Cook-off chicken
