I'm now suspecting that any recipe with Allspice in it is doomed to miss out on delivering the full song 'note'. And I care less if it is used in 99-X and Grace's. Thanks for the report. But I would not jump to conclusions here, Silver. You had two questionable items (Mustard, Basil) in rather high quantities in your recipe. One of which you said contains Eugenol too. Misplaced and wrong ingredients can ruin the note I would say. How many times did we fail on the note but barely questioned Sage, Pepper, Coriander etc. Why always blame Allspice. Allspice will not save your recipe no matter what. DF said Cloves was used only in the brine, not part of the OR 11. But you could try large amounts of Paprika now that you don't have to worry about ruining the oil in your Air Fryer I guess I should cook the exact same recipe with the Allspice removed, and with the following added for comparison:
0.33 g. Nutmeg 0.26 g. Clove 0.20 g. Mace 0.13 g. Cinnamon

Plus I'll also boost the Coriander from 1,5 grams to 2.0 grams, and not add the 0.5 grams of Caraway Seed. Then, since the basil already has the Eugenol demand more than well covered, I'll also leave the Clove out of my mix in addition to leaving out the Allspice. And to make it sum to exactly 100 grams, and to 11 H&S, a few more very minor tweaks. And thus 'Winston Shelton, 5' is born:

1) Bumping the Coriander to 2 grams is justified, because when I've had note success I've added 1.5 grams into 200 grams of flour.
260/200 x 1.50 = 1.95 grams, so 2 grams is close enough. And Caraway did not contribute to nuttiness, but rather is bitter.
2) Bumping the Salt up by 0.5 grams is justified because in my eating report I stated that Salt was a tad shy of perfection.
3) Dropping the Garlic from 0.50 grams to 0.33 grams is justified because none of the Esquire experts detected any Garlic, and more importantly, because the goal is to sum to 100 grams.

And of course there should always be an alternate plan. I noted in my eating report that Pepper bite was lacking, and Pepper seemed dull. I also noticed that my recipe #17 had no Marjoram. And in smelling my Savory there is a fair amount of Oregano like Carvacrol oil odor, so out goes the redundant Marjoram, and in goes some ~50K Scoville dried and ground Tabasco Pepper. And thus Winston Shelton 5 is stillborn, and Winston Shelton 6 replaces it:

Perhaps Mustard Powder emulsifies and softens the crust when it is comprised of Wheat Flour, but it fails to do so for Wheat Gluten. ?
Wheat is about 9% to 17% Protein (as Gluten), and the rest is Carbohydrates/Starches and moisture. Soft Wheat Flours (such as Cake Flour) trend toward the 9% protein end, and flours such as Pizza and Italian Bread Flours (High Gluten Flours) trend toward the 17% end. AP Flour falls in the mid range for Gluten/Protein.
The Vital Wheat Gluten process washes (or actually floats) the Starch and Carbohydrates away from the Gluten/Protein, leaving behind a Wheat Flour that is now ~80% Protein, ~10% moisture, ~6% Fat, and ~1% Ash. This is a typical compositional breakdown of VWG.

But you could try large amounts of Paprika now that you don't have to worry about ruining the oil in your Air Fryer If version 6 fails, version 7 of my Winston Shelton cloning attempts series will jettison the Basil, and add in 10 grams of Paprika in its place. That will require bringing back Clove.
Or better yet, since in my eating report I just considered the Basil to be a failed non contributor, and I believe Basil as a source of Eugenol to be highly suspect, I'll just consider version 6 to also be stillborn, and move directly to version 7, like this:

Jamaican Pimento (allspice) is that what your using it does have a different taste then other countries.
