Well I can say we tried it ALL ~ This was was NOT by intention
Today through oversight and Pure Op's. A New employee was asked to Grab the Flour and measure 16 cups of Flour to help speed up Getting things going.
The Newbie Grabbed Cake Mix Flour which is A Premixed Flour for WHITE CAKE Baking.
Some How even though I looked at the Flour and Though its NOT correct I chalked it up to A New bag of Flour and NOT sifted ETC, ETC, ETC,
I added the Spices and Herbs to the Flour, Salt, M.S.G. sifted the mix 3 times and started making the Chicken Wings / I knew it was not right at this Point there was NO mistaking the Flour was wrong from the way the coating was sticking and not sticking and the Aroma was Sweet. I knew there was a mix up. So got the Newbie to show me which Flour he Grabbed and then Knew WRONG FLOUR ?
I figured I could have washed the chicken off and started over BUT I said LETS ROLL THE DICE and see what will come out of a screw up.
The First Batch I knew I would have to WATCH heavy as the sugar would want to Darken and burn quick. It was a trial and what the Hell Chicken cook. Had a hard time getting the wings to proper Cooked temp. so Threw them into the Convection Oven to Bake the final part to cooked temp.
Short Story Ending / Sweet Donut Style KFC chicken wings / I just kept making them and called it a Festive Chicken Wings.
We cannot keep up with making them Do to the Extra Cooking Bake Time. We have figured out Changing the Deep Fryer Temp and trial process with the Pressure cooker its working out. Its more a Donut Wing Flavor.
Its working
We are trying a mix with some regular flour mixed in and blended with some cake flour existing The coating does cook more like a Tempura style cooked effect.
When I added the Flour with the Cake flour the whole flour changed to more Normal type effect, I had to add some seasoning to give more flavor and used the remaining of the Sweet 16 Spic Mix that was left and 1 other Spice Mix. I Had NO problem mixing those in as I knew the effect they produced previously. The Aroma from the Last Batch is Hitting Notes of K.F.C.
