In grams, Todd Wilbur's recipe could look like this (rounded). Per 200g of flour: Salt 20,000 Sugar 7,000 MSG 5,000 Tellicherry 0,350 White Pepper 1,000 Paprika 0,900 Savory 0,600 Onion Powder 0,500 Ginger 0,400 Garlic Powder 0,300 Sage 0,300 Cayenne 0,300 Marjoram 0,150 Feel free to correct me here. Tellicherry 0.350 or 3.50? Cheers, flg. 3.50 is correct. |

Tellicherry 0.350 or 3.50? Cheers, flg . 3.50 is correct. I have basically the same converted measurements. The only real gap was MSG. I had 1 Tablespoon closer to 12g but that was based on Accent as the MSG. So I could be wrong.

Wait. The chance is much higher that I am wrong. This is why I was hoping someone from the US would post the recipe  I made another mistake. In my notes, I wrote down that Salt (1 tbs + 1 tsp) and MSG (1 tbs) weigh roughly the same (24 grams). So MSG must be same weight if I am not terribly mistaken again. Wow. That is crazy amounts of MSG. Todd Wilbur's latest attempt scaled to 200g of flour: MSG 20,00 Salt 20,00 Sugar 7,00 Tellicherry 3,50 White Pepper 1,00 Paprika 0,90 Savory 0,60 Onion Powder 0,50 Ginger 0,40 Cayenne 0,30 Garlic Powder 0,30 Sage 0,30 Marjoram 0,15 |

I have 1 us tsp MSG @ 4g so that's where I got 12g MSG from. All others are in range of what I had calculated before. Either way that's way more MSG than I have ever attempted in 200g flour.
In today's KFC seasoning bag there couldn't be 40oz of MSG so that is where I call 20 in this recipe into question by Todd. Even if there was more way back when still can't be true. Even at 12g in this recipe that's like saying today's seasoning bag is 24oz of MSG of the 26oz. And even though I don't pay much attention to the bag weight "rules". It just seems highly unlikely.

I guess they needed to make money somehow on the Videos Licensed under some deal with the Companies ? it's funny that Unwrapped is still on youTube with there KFC interview unless they are removed also

Cheers, for the info. I actually appreciate it is now on Amazon. Quality on YT was terrible. 240p or so. Maybe this will give us the chance of a better shot of the spice rack. Not that it would help much, but yeah.
