increase the Ginger to 2.75 and increase the Sage to 1.50g

Wow that is a whopper amount of ingredients weight wise and a huge amount of Clove and Thyme. Both of which come forward fast in high quantities. On glance 35g into 200g flour not including MSG or Salt.
Would that look like 70oz of H&S into 25lbs of flour?

A person Does NOT have to use the full mix
The Original KFC Spice C.H.S. added more Spice and Herbs as Needed if required. HE said there are occasions where sometimes more spice was on the flour which was spent and Fried, C.H.S tasted the uncooked flour for flavor in the flour on his palm and licked the flour for taste

I used 2 grams of Coriander Seed within 200 grams of Flour once and the Nuttiness expression was way overboard. Even at 1.50 grams of Coriander Seed the Nuttiness expression is a bit overboard. IMHO, somewhere between 1.25 grams and 1.375 grams is where Coriander Seed Nirvana is most likely to lie.

By the time you scale it back to a tolerable level of Clove/Allspice it will have less ingredients in it than my recipe.

Yes, you probably need to scale back by at least 50% to avoid the clove/allspice overload
