CHS Got Durkee's Blending the Spices and Herbs after Claudia could NOT recover after the Passing of there Son. Joe L worked for them 58/59/60 They filled Bags that were Flour Style Bags NOT Foil in the Original Day. Claudian had Located the Heavy Paper BAGS they originally filled NOT CHS. There was NO salt in the Original Bags ONLY SPICES and HERBS. IN the ORIGINAL DAYS the MOM and POP location's WERE NOT mixing a LUG of Flour and Seasoning like what you see in the NEW AGE KFC. Do You think that CHS mixed 25LBS of Flour and Seasoning at Leon Harmon's in Salt lake City. The MOM and POP locations were Mixing between 3.5 to 4 Cups of Flour in a Larger bowl and adding approximately 1oz approximately 3.5 Tablespoons Of Spice and Herbs You were to Shake the Spice bag Prior to Measuring (Many People Poured the Spice into a Tin they Measured from while other left it in the Bag of Spices and Herbs it came in. Typically Salt was Measured BY Tablespoon. So, that is 500ish grams of flour to 28 grams of mix? Or 5.6% This is surprisingly low and similar to a 26 oz recipe that has some salt. You are saying a ~20oz bag is enough for 25lbs using your numbers? Have I misunderstood?

Here's a scenario. CHS, in an unfamiliar city and state, and grocery store, easily purchases several seasoning mixes to add to the salt and pepper already at Pete's place, and cooks up his OR chicken. When he leaves, Pete knowing how much chicken was cooked, takes the containers of seasonings, including a can of black pepper, and calculates how much is missing from each, and easily "reverse engineers" the OR. Later the two break down the mixes into a more "legal" recipe.
Or, take the alternative theory that Pete somehow deciphered the OR, and the proper measurements........from......11, or more, individual spice and herb containers.....a receipt.....with his intellect.......by scraping the bowl.
Typical fish story?

CHS has Pete’s family, who own the chain of some of the the best grocery stores in Utah go on a shopping trip to get what he needs, which he lists in detail. He might or might not have a secret ingredient, or withhold something special. It won’t matter. They borrow a pressure cooker that can cook one chicken at at a time or less. CHS cooks and leaves late that night. The ring on the pressure cooker shows the amount of oil. The chicken size was known. The pile of leftover breading was probably still in the kitchen, with milk and egg dip. Most, maybe not all, but most of the leftover spices were there. Some may have been blends, which makes it even easier. Pete and family and chefs fool around with some leftover spices and the pressure cooker for an day or two and make some great tasting chicken, just like we do, after only a couple of attempts. Does he replicate CHS exactly? Of course not. Is it even close to the finely tuned tastes here? Probably not. Does it matter? No. Because it would be amazing. Some people make Ledington as written and declare it authentic. :-) The innovation is pressure fried chicken with lots of salt and pepper and some herbs and spices. So it sells immediately because it is fresh and new and delicious and there is nothing to compete with pressure fried juicy chicken well seasoned in Utah at that time. When CHS ges back, after some shock and negotiation, Pete gets the real recipe as part of the deal, and CHS gets a business partner.

This is THE REAL STORY as told by CHS and Confirmed by Leon Pete Harmon under a direct question.
CHS went with Leon Pete Harmon to the Store CHS purchased ALL the Spices and Herbs Needed, The Brands and Tins he always used which were available. He also purchased the Flour he wanted The Chickens were FROZEN NOT FRESH (They needed time to defrost) Potatoes also and Veggies as They only used French fried NO mashed Potatoes'
CHS prepared the Meal Leon kept coming into the Kitchen while CHS was cooking and Got him some items equipment he needed. (THE Pressure cooker was borrowed it was a Large One)
CHS said that Leon had ALL the Spices and Herbs which were purchased and ALL he needed to do was see how much was used from the Tins, He knew How many chickens were Purchased and defrosted. He Saw How much Flour was used and Got CHS the Mixing Bowl for the Flour. CHS told him what size a Bowl needed for 4 Cups of flour ? NO ROCKET science in the amount.
It was easy For Leon to look at a 2 ounce Tin and see how much was used and reverse engineer it. He had ALL the Spice and Herb Tins, and each Brand.
The timing to cook it was Easy to figure out. After cooking some chicken (THIS WAS NOT a modified Pressure cooked a Off the shelf Hardware store Model) CHS Bragged How quick it cooked it and explained his method while showing some stuff in the Kitchen as Leon Pete Harmon helped with items. (They were renovating the location when CHS was cooking and it was NOT a large kitchen)
Leon Pete Harmon knew how to Cook he was NOT a Brown or Massey that could NOT boil water.
Leon Knew CHS used Milk in the Gravy he watched him make it.
In retrospect CHS said he gave Leon the receipt in his hands when Leon Cleaned up the Kitchen, Remember CHS never took anything with him and they cooked Late after the Location was closed. CHS was also flying out to Australia the next day. He left everything there ALL for Leon Peter Harmon to see.
Leon Pete Paid for ALL the supplies ON HIS ACCOUNT at the Store also. Confirmed by Leon Pete.
Understand this BOTH MEN spoke HIGH of each other. Leon also Immediately asked for all of Utah & Montana for his territory to make chicken when CHS arrived back 2 weeks later.
Leon Knew how Great the Food was and it was a Game changer for him.
Both had slight difference ways they told the story BUT both stories were almost the same ending Leon Pete Harmon was officially the 1st signed Location. CHS already had 3 other Mom & Pop locations cooking the chicken on the honor system BUT only a handshake deal, for those location They added the Chicken to the MENU. Leon went ALL IN.
CHS told the Same story many many times in Canada with little change in the story. Leon Pete Story was printed many times before conversation with Him.
Key Points
Chicken was Frozen Leon Paid for all the items on Account at the Store. CHS pickup up Everything he Needed as they were renovating part of the Location and CHS was NOT sure of what they Had on hand, and USED what he knew worked. CHS said that the Store had everything they needed EXCEPT the Pressure cooker.

A fellow on Ken's forum says that CHS gave Pete the recipe, which would make CHS a liar when he said he was surprised to see that Pete had duplicated his recipe. I'm sticking to the seasoning mixes story. It is the only one that makes sense to me. Remember, CHS debated at first whether to give franchisees the recipe but Pete talked him out of it. At the time CHS cooked for Pete, he was not as guarded as he eventually became. The individual ingredient containers story does not, in my mind, explain how Pete could have figured out the approximate amounts needed to create the OR, unless he was actually given the recipe. The point I've tried to make is that there has been a lot of lying going on for years and we cannot depend on any of the stories that have circulated. As far as I am concerned, they are all lies.
