Ok so i myself doubted vanilla in the recipe, but after buying some modern OR today for first time in a few months and really, really analyzing and paying attention to the flavour going on, it 100% has a vanilla/custard flavour going on in the aroma. I asked my sister if it smells like vanilla to her and she straight away said "yes it smells custardy" then i had her smell my organic madagascan vanilla bean and she straight away said "yep it has vanilla in it for sure" so who knows maybe there is vanilla in it? or some very unique blend of spices is recreating it? If there actually is vanilla in it then i would have to say maybe the vials actually are legitimate? because that would explain the black vial perfectly.
Edit: And i'm never buying it again. i literally feel sick after eating it.

After today i fully understand the flavour profile of the recipe. There is two elements going on with the recipe, you got the traditional flavour side of herbs/spices and then this other vanilla/custard side that makes it truly unique, and different to any other fried chicken you can get. The smell of tarragon fits this side too. I remember when i made a recipe with fennel/tarragon they really went good together and gave the chicken a vanilla like flavour. You can even check my old post where i mentioned this.
No traditional herbs and spices like garlic, pepper, sage, chilli, celery will ever recreate this other vanilla/custard side that the recipe has going on. You need to understand whatever spices/herbs is creating that vanilla side and you will have the recipe. Ive seen someone quote another well known member on here, "find the lure and you will find the recipe" well i found the lure, its that vanilla custard side.

Ginger when heated produces Zingerone, which is molecularly very similar to Vanillin (the oil which gives Vanilla its characteristic flavor). Just add more Ginger. No need for adding Vanilla.

Not sure if it's that simple, but i am planning on upping my ginger to 1 and half teaspoon after reading your other post on ginger.

On the old and long defunct TCK forum Vanilla was apparently tested extensively as an ingredient, and it eventually came to be known that it led nowhere, so it was eventually abandoned. I seem to recall that Glen tried it on his video series and rejected it as well. If it is there at all, it may be in the 'similar' form of heat decomposed Ginger, but the referenced sources potentially never conceived of this.

Perhaps I should revise my statement above "that it lead nowhere" to "that it led to an oddly off-putting vanilla flavor which was not evident within actual KFC OR". Glen noticed the off taste immediately. Do give it a try, and let us know if you concur.

View Glen and Jewels Opinion of the Chicken with Vanilla.
They clearly stated it was The Best recipe they have made and it would be HIS go to chicken recipe?
I will SAY this again from many many Posting
KFC NEW AGE CORPORATION in conjunction with KRAFT, collectomatic.
USED DREAMWHIP Powder in exchange for Milk and Egg Powder They also used Birds Eye Custard
BOTH were used and tried in the late 1960's and 1970's when the Health Boards requested that Real Eggs and Milk had to remain Temperature Controlled. This was a Pain for KFC NEW AGE CORPORATION and Franchises. Plus they were told they Could ONLY use the Real Eggs and Milk for 1 Batch cooking and then must throw out the remaining and use FRESH Eggs and Milk for the next Batch
MASSIVE wallet cost for KFC NEW AGE so they searched the Powder replacements
In the ERA when the TC Group were tasting chicken it was the NEW AGE CHICKEN WITH Dream Whip and Custard replacer.

What I heard was more in line with "I really like this one". Glen also stated immediately after that comment that it was not KFC_like. In a forum which is oriented toward capturing the note of KFC that should mean something. No sane person would deny the potential for recipes to taste superior to KFC. My wife thinks I have hit that mark several times now. But when KFC is the goal...
Plus they said they were going to follow up on the best 3 recipes going forward, and then never again used or mentioned the vanilla recipe. What does that tell us with regard to it's closeness to KFC?

"Clever Substitutes for When You’re Out of Vanilla Extract Posted by Erika | Jan 5, 2022"
"If vanilla isn’t the star of your recipe, using complementary baking spices instead is a great way to add flavor to your dessert. Cinnamon, nutmeg, cardamom, allspice, or ginger are great for using instead of vanilla".
I also have read about espresso coffee, and have tried it. I probably have had the smell of vanilla in my nostrils more than anybody on these forums. I am not going down that rabbit hole again. I never tasted, or smelled, vanilla in KFC in my entire life. As a child, I would ride my bicycle past KFC, with that aroma in the air, on my way to our bakery, with the vanilla aroma in the air. Not once did I think, "those smells are similar".
