Just mixed my "put it all together" seasoning. Not counting salt, I get 12 ingredients. If the pepper (I have both together in one vial) is removed from the vials, then there are 11 (One of these, sage, savory, or rosemary, may have to go). These, along with salt, are all that are needed to cook chicken (besides the chicken, flour, egg, milk, and oil).
I am dry brining four free range, non-brined or injected, chicken thighs as I type. Looks like my KFC mixes, except tastes twice as powerful. I'll brine them overnight, cook them on low in Crock Pot, then re-season and bread, then brown on high for a few minutes (trial and error). I trimmed the skin, and fried with a little of the seasoning, and they were spot on.
There is a lot of whitish powder, in the KFC mix, and mine, which means that the vial contents and garlic and onion added extra, simply won't work as most have opined. On a scale of right or wrong, this tips my endeavors towards the positive, or right side. CHS told Winston Shelton, that he could make KFC chicken with the 11 ingredients he had given him.
Basically, you can't cherry pick some vials that prove an opinion, and reject the vials at the same time. If accepted, then explore diligently. If rejected, them remove them from your language, period. Thus, you can't say that this vial is 100% this herb/spice, but there are 31 ingredients in the OR.

If your using the Jamaican Pimento then Cinnamon is Out YES

That is what I use. Cinnamon in any quantity has an overwhelming taste of..........well..........cinnamon.
I'm cooking my second round today. The brined chicken out of the frig sure smells flavorful. The first round was with cinnamon, and it tasted like cinnamon. I can see it tasting much better with celery, the smelly socks. NOT!

I've had to refrigerate the chicken I cooked because I've caught a cold. Everything is on hold, as I can't taste.

Smallgree, through parallel evolution, F&G-26+ (6-6-19) is similar to one of my recipe and absolutely gives off the distinctive KFC aroma and aftertaste. Did you by any chance keep any of the old mix and saw how it ages? My problem with it was in how the mix decayed into another unwanted direction in only after a few days. I tried taking out the celery and seemed to do the trick.
Also, through Silver’s work, I tried Star anise: but admittedly still on the border with it as I’m not fully sure that CHS would have had access to it.
Currently, I’m in the process of redoing the recipe by the DFN101s’ experience with CHS. Regrouping all the vegetables from the recipe and thus solving the problematic celery in the H & S. The problem now is filling in the rest of the 11 H & S.
Btw, it’s funny how some denigrate vanilla being in the kfc recipe but profess Custard powder. Vanilla is a major element of custard.
Admittedly, I have added cinnamon in very minute amounts as it almost disappears when added to ginger.
I haven’t seen additions of Soft drinks to the recipe yet in this forum. I have seen 7up, ginger ale from other forgotten sources. But one that I haven’t yet seen is root beer. It has both a sarsaparilla or sassafras note that could belong in the KFC OR and the much sought after vanilla.

Btw, it's funny you are mentioning me in a post that has nothing to do with me, or any mention about Custard Powder? and strange you would even bring up the topic of Vanilla, when smallgree has already stated he is against it. Almost like you were baiting him to reply something about how he dislikes vanilla because you think that will change my mind? or make me think i am wrong? i already told you i trust my own opinion over anyone elses. Clearly i am living rent free in your mind. Funny you try to make me look stupid/discredit me by saying i don't believe vanilla is in the recipe, but i believe custard is? I have literally said on here many, many times vanilla is in the recipe. My exact words: "Custard powder is in the recipe, and this is where the vanilla taste comes from" You really must be a shill LOL! I can smell the shill on you. Just know, you are NEVER changing my mind by anything you say. You know i have got the recipe closer than anyone else

They will try your recipe and either back up your claims or deny it. Why don’t you go further, be brave and claim it as The recipe.
For one, Refer to the YouTube, et Al, that denied vanilla being in the recipe. Just curious, what is your ethnicity to be so acerbic? Have you been a cook all your life?

Why claim it as the recipe, when there is more work to be done? i already told you i am still considering sesame seeds, tomato powder, etc. However, there is not much more work to be done, and i am unbelievably close. Simply because i won't be changing my mind on things like celery, mustard powder, cinnamon, fenugreek seed. I have all these secured Once you know, you know. That's problem with everyone else, they can't see clearly and constantly changing their mind.

Your main argument is that you have an innate super human senses. What would happen if everyone else holds that argument.
Refer to Dfn101 mentioning custard powder. And why would CHS spend extra money on custard powder when it’s simply eggs, milk, flour and vanilla?
I have my own hypothesis that is totally independent of whatever you are trying to do . I neither have the interest to change your mind nor pay attention to your efforts. You haven’t even discerned the thrust of my question regarding the H & S!
Be brave and post your beliefs regarding the KFC OR! Make a million with it! There was a cook who became a celebrity when he touted coriander! You can do the same with your 27 ingredients! Think of it! You’ll be famous!! Don’t let one forum cage you!
