As a teen years ago, I tried this recipe and found it unsatisfactory. www.cdkitchen.com/recipes/recs/520/KFC___Big_Bucket_in_the_Sky_Chicken34923.shtml Nevertheless, it was the cornerstone to an endless quest to recreating the colonel’s recipe. The odd matter that I find is that, similar to life, people will always have a different opinion on what they sense or feel, or remember. The sad thing is that as time passes, the original OR taste will get forever lost.

I've considered tomato powder and i've got a big bag of it, it has a nice taste. My only problem is that paprika is very tomato like in flavour and works better in the recipe and chicken. There is red pepper, and atleast tomato powder/paprika, but definitely not all 3. If tomato powder doesn't stain oil like paprika does then 100% tomato powder is in the recipe. I haven't checked to see if it does yet. Sanders would choose tomato powder over paprika if it meant the oil didn't stain. You get the same similar flavour, but no oil staining. Personally i get tomato taste eating modern o.r
Cinnamon is 100% in the recipe, i can see it clear as day. If you think there's no cinnamon might aswell remove ginger too. It makes no sense to have ginger in the recipe but without cinnamon because they go well together. Every person who understands cooking/spices knows this.
Cinnamon fit like a glove in the recipe for me. Its flavour combines with the nuttiness of the mustard powder etc and just too obvious.
Also detected it without doubt by tasting modern O.R There's also a post from a worker who said "one day the spice mix had an overwhelming cinnamon aroma"
With the nigella seeds, let's say i am 100% correct that they are used as specs on the modern O.R. Would you consider that as sufficient evidence that vial c is indeed nigella seed, or would you just think it is something the corp has added?

I have three bags of KFC seasoning. I haven't found the specs for anything except pepper, msg and some powder. Some specs appear to be tasteless ash, which I assumed was visual to give the appearance of pepper to obscure the use of extracts. The KFC seasoning I am sampling now has absolutely no hint of cinnamon. I have detected no hint of cinnamon in modern KFC chicken, nor do I have any recollection of cinnamon in old time KFC chicken. My view of the Good Seasons mix, and the suspicious CHS confession ad have no correlation with the recipe posted above, which was just swinging in the dark. Thank you for providing the valuable image, Smallgree! 🏆 I find the Allspice and Ginger to be very close in flavor profiles as to be considered substitutes, especially when clove is added to the mix. Cinnamon did make my recipe closer. My problem is celery powder- I probably need to reduce it assuming the celery truly is in the mix.
There is still a large flavor profiles missing in that list that the spices cannot provide. So perhaps, you are right Smallgree with regards to the words of CHS. Maybe, CHS was merely exhibiting the centuries old practice of cooks everywhere of not revealing all the secrets to a recipe.
Regarding the veracity of CHS words, the product from the spice list would not have produced a reddish hue to the chicken. Although, according to Minnie Pearl in the Tennessee Ernie Ford special did indicate the cooked KFC dark.
As I see this list, I see more the importance of the vegetables.
DFN101, since I consider you pretty much as our resident CHS historian, how does the 1952 image coincide with the events of CHS? First, what do you think about its authenticity?

The modern chicken absolutely has cinnamon in it, and CARDAMOM! Allspice is not going to give you cinnamon taste. It will give you the faintest, faintest hint of it. Also, allspice isn't going to make the store aroma smell like they are baking with cinnamon. One time i went to the store, the aroma in the cooking was just straight up cinnamon and i don't know how that's even possible. You do you tho. Proof 1. I've detected without doubt, on multiple occasions, and still detect cinnamon in the modern o.r Proof 2. Ginger is in the recipe, anybody who knows anything about cooking would know that means cinnamon is in it too. Proof 3. Worker: "one day i was emptying the spice mix and there was an OVERWHELMING smell of cinnamon" allspice would not do that. That's all the proof i need. My taste is better than most of you. Imagine i eat turkish bread and my instant reaction to the taste of the nigella seeds was "these are in the recipe!!" I had no knowledge if they were or not, but my taste said they were. I then began to doubt myself with sanders statement in my mind "common to shelf" and so i told myself oh " maybe it's just cause they have flavours similar to some of the ingredients in the recipe" Until i literally discovered them by accident on the literal modern o.r chicken. Now i know why my instant reaction to tasting them on turkish bread was "omg these are in the recipe" BECAUSE THEY ARE IN THE RECIPE! My other strongest instinct i've had like that is with CELERY SEEDS! Anyway, i really don't care what you guys do, i am just trying to help.

I'm done trying to help you guys lol. You are either shills, or just lost.
Anyway, when i got my recipe to where i want it, i will get one of those big food channels to try it.
The opinion of the majority matters more than the minority, or even people who think their opinion matters more just because they've spent so much time on this (it doesn't)
The reason when that food channel tried the TC34D recipe and they said it was horrible and nowhere close is because that is the TRUTH!
When you got the real deal recipe literally EVERYONE will agree.

This is how Ellsworth acted. "It's my way, or the highway". I have three KFC seasoning bags and there ain't no cinnamon in any of them. Besides, who cares what modern KFC is using. I'm looking for pre-corporate KFC. It's a misnomer. Arguing about something irrelevant. Makes you wonder, doesn't it?

You don't take this anywhere nearly serious enough as others do. For you this is just a side hobby you do now and again. You aren't really fussed if you crack it or not. The difference between you and me is that i'd legit pay a billion dollars if i only had 2 billion dollars to just know what the recipe 100% contains, even if i already knew 90% of what it contained, so $1 billion just to know that extra 10%, and to confirm what i already know. Tbh idk if i'd pay that much even if i were that rich, but you get the point. Also, i don't believe you ever tried the nigella seeds. Post a picture of your nigella seeds with a piece of paper with your forum name on it, i'll wait.
