I think you can take any recipe and mix it with my new formula and get close to the "note". It is the msg and how you use it. You'll notice if you've seen modern KFC seasoning, that the msg is in much smaller particles than what we buy. I'll tie it all together later with all the loose ends, hopefully tied.

LOL. I'm looking at one or two of the green vials being either celery seed or fennel, or both. That means no more than two or three herbs. The daughter once said that there weren't many herbs in the recipe. When CHS threw two handfuls into, whatever, did it ever occur to anyone that he was throwing only into the separate 11 Hs&Ss, and not the complete OR blend? I'm determining now just how to distribute the msg throughout the mixes. Look at the 1970s KFC seasoning bag and find the framework to discover the OR. Ingredients are listed by weight, but that doesn't mean that all of the MSG is added at one time. MSG is the heaviest, but that is collectively. Maybe the msg is divided into three groupings, or multiples. I've already done it and found the aftertaste. I'm cooking thighs in the CrockPot today with only the KFC 2016 mix and salt.

There's absolutely more than 3 herbs. If i was doing 3 herbs tho it could only be sage, thyme, oregano. Just not enough to make it work imo.

I can see possibly sage, oregano and rosemary. I have seen information that sage and oregano was used, and I've seen those napkins with pictures of rosemary. But otherwise, I don't see any more. I also found that all the seeds, fennel, cumin, anise, caraway, celery, etc., are all fruits.

Just mixed another experimental blend. MSG, white pepper, black pepper, garlic salt, 6 vegetable herbs, and 5 spices. I chose the herbs and spices on no particular scientific classifications. I just picked them as CHS might have.
I've got three plastic containers with (1) very fine salt, (2) the peppers and some garlic salt and msg, and (3) the herbs and spices with some garlic salt and most of the msg. Multiples.
I'll cook something after thanksgiving, but this mix may be, if not the OR, maybe the correct procedure. I ignored most of the recent suggestions, including, but not limited to, sesame seeds, sumac, za'atar, basil, chili, and onion. I will try fennel later instead of celery, or cumin. Whoops. Freudian slip.
I cooked Cherokee Chicken Chili for a charity chili cook off Saturday. Most entrants were red chili (actually all except for mine. Women don't usually like chili too spicy. LOL). I smelled the odor of chili in the room (a pub) for hours. Just as I've smelled KFC like smells outside of Mexican restaurants.

C.H.S. Had other recipes for Spaghettis Sauce and B.B.Q. Sauce and He Had His side dishes which were Hit's
ANYONE whom thinks that the Ingredient's that were used in the side dishes or the Sauce's were NOT the Same Ingredient's used or the Majority if the items used in the CHICKEN SEASONING might be fooling themselves.
Keep in Mind C.H.S. was cooking in the Servstation from the 1930's WHAT WAS AVAILABLE in the 1930's and while C.H.S. was delivering Babies as a Midwife ?
It was NOT AMAZON and over night delivery.
Everyone is chasing the NOTE AROMA - To achieve it at HOME is 100 times harder and the NEW K.F.C. Do Not have the Aroma until week after Cooking 100's and 100's of Batch's of Chicken. We just open a New location for K.F.C. and there was NO lingering Smell of the K.F.C. until all equipment and the Filtration system was Seasoned with continual Cooking.
Yes there was a Immediate fried chicken Aroma BUT not the Hard Aroma for 1 week.
Keep in mind home Cooking and at what Point Does your Homemade Sauces and Items Cooking start to give the heavy Aroma IE: Chilli or Other Sauces slow cooked
What Items have more Aroma when fry BACON with a HIGH Fat heavy aroma compared to a Less Fat Lean meat. Bacon also cured and Salt.
I know this info is useless to the Old timers BUT there are NEW Comers to the site.

I went ahead a cooked some thighs today. I cut out the bone and pinned the skin to the meat with toothpicks. I'm still working on the salt. I fried in new hydrogenated lard in a cast iron Dutch oven. Great chicken. I added extra black pepper and salt to the cooked chicken and had an exact duplicate to today's KFC. It is apparent that seasoned oil is part of the creation of the note. Once I get the salt correct, and season this new oil, I believe I might have something. No doubt that extracts were used early on. I'm getting there.
