I think that foreign Lay's KFC Original Recipe Chip package with the ingredients listed on the back is one of, if not the best find I've seen, if it is legitimate.

I'm happy with my formula, so now I'm looking at ingredients. I have been given some suggestions, and looked at that potato chip package, and thus visualized this lineup:
A - Coriander B - Rosemary C - Dark brown sugar D - Savory E - Allspice F - Fenugreek G - Ginger H - Nutmeg I - Sage J - Chili flakes K - Black pepper
The main ingredients of coarse black pepper and white pepper, and msg are not in the vials. Mustard and celery are excluded as allergens. I throw them back in. Garlic and onion salt are added, but not in the vials. Fine black pepper is actually part of the makeup of the 11 Hs&Ss, which were added to enhance the peppers. I also added a bit of citric acid to the mix.

What made you decide to add fenugreek in? you said it has a funky taste before? It is 100% in the recipe imo, and i use it in all of my cooks.

I've looked at the potato chip bag, Ledington's, Shelton's, TCK's TC34D, members' recipes, my recipes, and lastly, that 1974 Esquire magazine article. The potato chip reviews show that if anything, it is the modern recipe, and the consensus is that it doesn't taste like KFC.
If you have done your homework on substitutions and allergens, I believe the correct lineup of ingredients is at hand. My last recipe I drew up appears to be close to what I'm looking for. It was just shortly following this announcement that the potato chip bag popped up, and also the suggestion of fenugreek.
Remember, the 1974 Esquire article was after KFC had gotten more salty. The comment that the chicken was sweet and Southern chicken wasn't sweet, is just an indication that chicken in those days wasn't seasoned as KFC was. Herbs and spices can give the impression of sweetness. It is also possible, since some detected a lot of salt, that the testers were given different chicken samples, mixed together. The deviousness of KFC has become apparent in my mind. I wonder.
I will be in the lab for awhile, so stay tuned. I have lots of chicken thighs lined up.

Back in the day When Yves and I were looking for that one ingredient, we were looking at lemon and orange zest, and za'atar and sumac. Not long afterwards, Yves declared that had solved the riddle. Never heard from him again.
I got to looking at vial C and saw something I had missed before. The substance is coarse and seems to contain small white particles, one of which is quite obvious. None of the guesses about vial C's identification would contain white specs. I did some discovery and am now convinced that the substance is sumac.
Sumac apparently goes hand in hand with coriander, paprika and many herbs we use. Fenugreek is present in some versions of za'atar, as is oregano, marjoram and thyme.
