What slays me is that I’d say I’m better than 90% happy with my latest series of a recipe. I saw Chickenman say 99%. Silver said he was pretty happy with his. And I believe 11serbs is happy with his so far. So if you look across the ingredients I bet all of us have around 8 in common and 3 not so much. And we are tinkering with those. So instead of trying to determine if 1 of those 3 variables works and should be there for us all. We get distracted by something out of left field. And it’s every time. I think the Buckwheat suggestion came at us with a bit of comedy attached.

I Guess you ARE NOT having a issue with Flour and Texture of the CHICKEN breaded that has NOTHING to do with the Spices and Seasoning
I Do NOT have a Spice and Herb issue LOOK at the last Photos WE HAVE A BREADING issue that has just started in the LAST MONTHS.
SO we went back to the REAL research behind the ORIGINAL KFC Flour which would have been used in the 1930's to 1960's
CHS in History ORIGINALLY said “soft-wheat” was what the Franchise were to use WHICH IS NOT USED BY the NEW AGE KFC in 2022.
CHS then had a more uniform flour for ALL of KFC, when there were changes with the Milling of Flour BACK in the 1930's stone Mills were used and cross contamination was heavy and most All Purpose Flour were Tri-3 Blend Flour Wheat / Corn / Barely
As New Mills and Roller Mills developed the Cleaning of the Mills were much easier and the Grains Grown were not as cross grown and more cleaned grain grown and became more individual based FLOURS.
NOW KFC NEW AGE uses a HARD WHEAT in 2022 BUT that is required for a CRUNCHY HARDER COATING NOT NOT NOT the Original more Moist Rose color Coating the ORIGINAL CHICKEN WAS.
ANY idiot can make a CRUNCHY COATING by adding CORN STARCH and Starches to make the COATING CRUCNCH.
READ MY 40 or 50 POSTING SPANING decades I have continually maintained the Coating that is more Rose Color and MOIST as similar to what was spoke about from Gloria P NOT THE GOLDEN BROWN Crispy Coating which CHS HATED HATED HATED.
SO if your Perfecting 2022 NEW AGE CHICKEN CRUCNCHY
