When using Thyme one must likely also use a Marjoram or Oregano. But when using Summer Savory both of these bases are covered.

Adding Summer Savory alone (in higher quantity) is a lot like adding Thyme, Marjoram, and Oregano (in lower quantities). This is why my Recipe #17 works.

I have done enough experimenting to know thyme is a 100%er. At one stage i was against it and left it out in alot of recipes. The minute i added it back in, i knew straight away it is in the recipe. Made the cooked chicken smell much closer.
It has a great woodsy kind of flavour, and i personally think it works better than summer savory. My recipe right now has 7 herbs. The herbs are just as important as the spices.

Original 1939 KFC may not have used Summer Savory after all. And perhaps that's why you don't see it in recipes such as Ledington's or Graces.
