The Keto diet tries to keep daily carbs at about 50 grams. You can nearly eat 8 'mixed' pieces of KFC_OR chicken (I.E., a whole chicken) per day and stay below the 50 grams of carbohydrates limit.
50/6.5 = 7.692 pieces of chicken
Bet you didn't imagine KFC_OR to be nigh on the perfect high fat and low carb KETO food (though obviously not Paleo level Keto). You can gorge on it and eat 7 to 8 pieces per day if you like and still remain Keto compliant. Does this seem realistic?

It turns out that foe All Purpose Flour there are ~73.3 grams of carbohydrates in 100 grams of flour, and for Cake Flour there are ~78 grams of carbohydrates in 100 grams. I had been presuming 90 grams of carbohydrates in 100 grams of Flour, so if we take 75 grams of carbs to be an average, then all of my carbohydrate calculations preceding this post have been on the high side by about 20%. The result of this 20% error does not change things much, as it still remains a mystery as to how KFC can claim to have such low carbohydrates for their chicken.
But if LUG losses due to sifting are at about 50%, then the mystery is solved. Is it possible that ~50% of the flour that enters the Lug never finds its way onto chicken, and instead gets disposed of?

I Think they are ONLY calculating there carbohydrates Based on a 12% coating sticking to the Chicken. They Do Not calculate it on how many grams are started with in the Mix.
I will leave it to you if you can calculate the Math based on % of coating sticking on the chicken?
currently Canada KFC make the Chicken with this Math average. 21Lbs of seasoned flour will coat 224 Pieces of chicken. or 10 pieces of chicken per 1 Lbs. of Flour Seasoning used on an average
We currently have Flour left over in the Lugs when finished BUT never weighted the amount left over.
I Do Not know if you can Do you math on Real chicken Piece count per Combined Flour rate, or if real numbers help.
I guess one could weight the seasoned flour you mix coat chicken and do weights per piece to see math if one wants to do that math

What does 12% coating mean? Does it mean that 12% of the weight of each 'mixed' piece of chicken is coating?
And what is the average weight of a fully dressed KFC chicken (in Lbs. or Kg.)?
Does KFC derive 4 breast pieces per chicken via cutting each breast in half?
I presume that KFC gets rid of the keel (back), leaving either 8 or 10 pieces per 'head'.

Weighing a water wetted wing, a leg, a thigh, and a breast piece before and after coating in the seasoned mix would be helpful. My first "educated guess" is that ~81.3% of the seasoned and fully prepped flour mix in the Lug is going to be "flour". The rest will be H&S, Salt, MSG, powdered milk, and powdered egg.
