Hey everyone ,
Did any1 tried any legit kfc recipe with caraway ?
Does it have a kfc note ? This is really really important question for me .
I nearly cracked the original recipe . This question is critical for me .
BTW there is NO STAR ANISE in Colonel O.R I have proved that . At lest for myself ATM .
X-99 IS TRASH - FULL OF UNNECESSARY FILLERS it has only 50% of the note .
So please answer my simple question based on your past cooking experience / taste smell of caraway .
thx

I nearly cracked the original recipe . Hi Caraway, welcome to this forum. Can you publish your recipe here so all of us can try your recipe? Anyway. I have tried caraway once, a long time ago. I wasn't impressed by it. It didnt had that KFC note that we all are looking for.

Also one of the first true recipe that attempted to crack the code back in 2005 was Manny's famous recipe, and it contains Caraway too. I tried Caraway myself, I tried it with 1/4 tsp, 1/2 tsp, 1 full tsp, and I couldn't satisfy myself to its worthiness to the overall profile. You have to try it to feel this. Deep Taste

Ow shit... Sorry kaweempo. Think I was car-a-ried-a-way a little Anyway... First of all, I'm one of these people who do not believe in the "11 spices and herbs" thing. CHS (Colonel Harland Sanders) stated that he "always made good chicken" but that he wasn't satisfied. So one day he added the "11th ingredient". When he tasted that chicken he claimed that "it was the best chicken" he ever tasted. Therefore I think the 11th ingredient is key here. The other 10 spices and herbs (he "always used") are just a good and tasty seasoning mix, but so are many others. I dont have facebook thank god! (Sorry)

Welcome deeptaste . I have proved that there is no staranise in the vials graph thus no in O.R
Interestingly The only Profile that is similar but more subtle than star anise is caraway and fennel .
I Cracked 8 herbs and spices from the vials graph . And here is the first place for me to list the ingredients .
A - Coriander Or Caraway
B - Celery or Coriander
C - Chili
D - Sage
E - Allspice
F - Ginger
G - White pepper
H - Hickory smoke salt
I - Up for depate ( Savory - Thyme - Celery - Marjoram - etc ... I can be more open mind with this)
J - Cloves
K - Black pepper

Deeptaste , Admin . After i analyzed the vials deeply . I can say for sure there are only 11 herbs and spices pi The garlic is the 11th , Vial H is not a herb or a spice The only challenge now is to decide A and B and I A are either coriander or caraway B If A is caraway . This is coriander . Otherwise its Celery . That's it . I am happy to share this with you . If you want prove for the other vials . I will upload . kaweempo

Kaweempo,
Vial C could be Chili, nothing to deny here, but it could also be Cloves, Allspice, Vanilla bean, It could be Basil that turn black through the years, and it could be also Dill weed for that matter.
As the Admin said, the different 11 herbs and spices is a marketing term, you only need flour, salt, MSG, Pepper, and that secret 11th ingredient that the colonel added to his recipe.

It is not just one element. It is one element that fuses the divergent ingredients into the one note, a note which is fused with and enhances the black and white pepper.
Just take out your clove, allspice, anise, fennel, star anise and caraway and have a taste comparison. Then judge what you have. Remember what that fellow said years ago who raved about solving the OR riddle. He said make the gravy first. CHS was the most proud of his gravy. How would you make gravy with the ingredients listed above? Maybe one as a counter flavor, but more than one?
