I've tried exceeding 13-16 grams in 200 grams of flour twice now, and I've not been pleased either time. More H&S does not seem (to me at least) to be a viable solution.

I agree. My early on recipes I pilled on the herbs and spices and that just wasn't right.

In ALL test and cooking we have found that more spice properly sifted Did not cause any issue with flavor except better Taste.
If you reference to Todd Wilbur and other Youtuber including Guga, Sam the Cooking Guy, Food Experiment and others they have tried HIGH % of spice and ALL said it Great.
2 Michelin Star cooks have tried a cook off making KFC in the last 3 months and they used values from and similar to Claudia and said it all worked Great ?
So being perplexed as to amount I will be Mixing 3 different test for a Taste test 7,10,15 % spice to Flour ration. for Test

Final revisions. Decided to suppress the Sage and eliminate the Savory as per Glen's final episode. This permitted upping the white and black peppers, as well as achieving better compliance with 11 H&S. The hope is that one or both of these recipes will hit a home-run.   |
