AFAICT, Star-Anise does not contain any Eugenol (subject to welcomed verifiable correction).
If that's the case, and there are a number of people claiming to get more and/or a better 'note' sensation from Star-Anise than for Allspice, then Eugenol oil may not have anything to do with the 'note'.

Hold the presses. The above can't be correct because we know that Allspice delivers only 1/5 the Eugenol of Clove. So the Clove component within 0.75 grams of Allspice is 0.20 * 0.75 = 0.15 grams of Clove. 0.75 - 0.15 = 0.60 grams. If half of this is Nutmeg, and half is Cinnamon, then there are 0.30 grams of each of these. So to replace 0.75g. of Allspice with Clove and Nutmeg, while eliminating Cinnamon, the proper quantities to add are 0.15g. Clove and 0.30g. Nutmeg. I looked I had .25g Nutmeg and 0.15g clove in the Kitchen Sink and it was one of my best recipe's. I did however add Allspice so I think I should eliminate it out of that recipe base

Been Thinking of this as a radical recipe using pre-made spices:
For 200g Flour
4g MSG 3.5g White Pepper 3g Black Pepper 2g Farm Boy Seafood Seasoning (garlic, onion, Bell Pepper, Parsley, Orange peel) 1.25g McCormick's Poultry Seasoning (Thyme, Sage, Marjoram, Pepper and Nutmeg) 1g Ginger 0.70g Coriander 0.25g Nutmeg 0.15g Clove 0.15g Anise Seed

My guess is that if you toss 0.65 grams of Allspice into the simple Celery Seed recipe as seen above it may evolve the note. But I have not tried this yet to verify. I'm revising this 'note' seeking addition as follows: 0.15 grams Clove 0.30 grams Nutmeg Add the above instead of Allspice.

So I took some of the Seafood Seasoning from above. I ground it fine and rubbed it on the fish (not heavy). Then I used some of my left over recipe from November. I had thought Kitchen Sink but I want that for baseline testing. Anyway, a great combination and I could taste a good amount of the note on the fish. So I am going to try this radical recipe one day.

My radical new thought for the day is that a (greatly revised) fit of White and Black Peppers to an approximate equivalent of the Scoville Heat Level Scale is as follows:
White Pepper ~= 11,000 Scoville Unit Equivalents Black Pepper ~= 10,000 Scoville Unit Equivalents
For a quick relative heat comparison with items assigned real Scoville Units:
Cayenne Pepper = 30,000-50,000 Scoville Units Crushed Red Pepper Flakes = 3,000-5,000 Scoville Units Ancho Pepper = 1,000-2,000 Scoville Units

Had a hard time deciding what thread to post this in. Starting to get overloaded. But I think it makes sense here so here goes. A few weeks back while out shopping I ran across a seasoning pack at a local store. The list of ingredients caught my eye and then I noticed it was 26g. So I had to buy it. It was labeled as a seafood seasoning. What caught my eye was the "vegetables" listed, which has been a topic of discussion raised I believe by deepfriednew101 on numerous occasions. I then stumbled on a poultry seasoning I had and noticed that the weight listed ingredients the same as Glen and Friends. So I have decided to go forth and try this "fun" recipe. Just to get away from my more locked in versions. my FUN recipe as follows: 6g MSG - 3.5g White Pepper 2.5g Black Pepper - Combined represents the highest I have gone 1.5g Farm Boy Seafood Seasoning - I will add the photo again 1.0g McCormick's Poultry Seasoning 0.5g Coriander 0.5g Ginger 0.2g Allspice 0.15g Anise Seed 0.15g Clove Mixed into 200g flour and a minimum of 26g Salt (I will use 27g). I will see if I can make this later this week. I will let the ingredients meld for few days.
