Or perhaps spray your coated chicken with 'Pam' cooking spray. Might be the ticket for Air Frying.
Ingredients Canola Oil*, Palm Oil*, Coconut Oil*, Lecithin from Soybeans (Non-Stick Agent), Dimethyl Silicone (For Anti-Foaming), Rosemary Extract (Preservative). CONTAINS: SOY. Also contains propellant to dispense spray. *Adds a trivial amount of fat.

Caution: There are emulsifiers that suspend water in oil, and there are emulsifiers that suspend oil in water, and they are not the same thing, and they have different functions and purposes, so beware and be warned!!!
The foam that annoyingly floats on top of hot deep frying oil is an emulsion. Use emulsions improperly, or use the wrong one, and you may just overflow your deep fryer with an oil and water foam and cause a major fire.
I'm not so enthused about emulsifiers after considering this. No one wants an oil fire!!!

It seems logical that the emulsifier one chooses should be of the type that draws oil into water, as opposed to one which draws water into oil. But this is a science that is beyond my adequate understanding.

My radical thought for the day is that a 40 ounce bag compliant recipe with zero H&S, when scaled to 200 grams of flour, should look a lot like this:
200. grams Cake Flour 28.5 grams MSG 28.5 grams Salt (with 4.5 grams in the 'bag', and 24 grams added external to the bag) 3.50 grams White Pepper 3.50 grams Black Pepper
With this much MSG, if the note is strongly influenced by same, then this would be one means whereby to verify it without any other conflicting flavors (beyond Pepper) whereby to confuse matters.
Edit: There has been reference to achieving about 80% of the flavor of KFC OR when using only these ingredients, but I suspect the recipes looked more along these 26 ounce bag compliant lines:
200. grams Cake Flour 28.5 grams Salt (with 4.5 grams in the 'bag', and 24 grams added external to the bag) 3.50 grams MSG 3.00 grams White Pepper 2.00 grams Black Pepper
