The real secret is most of the elusive 11 H&S didn't really matter. Particularly if it's true that very good chicken can be made with only Salt, Pepper, and MSG.

Pepper and Sage are the 2 Largest Note Qualifiers
Onion & Garlic are also major Note infusion

It could just be me, but when I look at the photo of 99X it looks very dark with black pepper. It would not surprise me if it proves to have more black pepper than white pepper.

My radical thought was is it more that White Pepper was replaced with an extract than black. or more of it. Perhaps recipes starting with 3 grinds of Black Pepper then White. Are recipes not accounting for White Pepper extract or the level of it.

even if you use cracked white peppercorns
Currently undertaking to Use White, Black, and Red Peppercorns and have 1/2 powder fine, and 1/2 40 Mesh screen cracked.
white will still be the Higher of the Amount But not a large amount higher. 40/30/30 division.

My radical thought (question) for the day is:
Was MSG ever referred to by CHS or any of his associates or close acquaintances as ingredient #12? If yes, then Salt must be counted among the 11 even though it does not meet the technical requirement of being a spice (because it is a mineral)?

YES MSG was the 2 Handle full items Added at Cumberland Lake.
1 Handful is 35Gram so 2 Handfuls = 70Grams
THIS IS A 100% thing CHS called it a Element NOT SPICE OR HERB

I'm going to compromise in a couple areas and settle upon this recipe:
Once I've built it at 10X and cooked it, I can modify the remaining 9X. Adding some Green Cardamom seems tempting!

Which methodology will lead to a highly successful clone of KFC_OR first, brute force, or science?
It seems rather obvious that the minimally educated CHS applied what I will refer to as the brute force model. Throw things together and tinker, tinker, tinker, with them until you are finally happy with a result.
