How much Allspice should I use in teaspoon measurement?
25 x 16 = 400, so 25 Lbs. of Cake Flour = 400 ounces.
An easy way to scale this way down is to simply substitute Grams for ounces.
3.2 Cups of Cake Flour ~= 400 grams. 1.6 Cups of Cake Flour ~= 200 grams
Therefore 26 grams of Herbs & Spices (H&S) plus MSG and a partial of the Salt go into 3.2 Cups of Cake Flour, and 13 grams of H&S go into 1.6 Cups of Cake Flour.
Ground Allspice weighs ~2 grams per TSP.
MSG is considered to be added at a level of ~3-3.5 grams per 1.6 Cups of Cake Flour. Call it 3.25 grams.
13 - 3.25 = 9.75 grams remaining for all of the eleven H&S plus some small part of the Salt (for a batch size of 1.6 Cups of Cake Flour).
Pepper (for 1.6 Cups of Cake Flour) is presumed to be about 5 grams, with 3 grams being White Pepper, and 2 Grams being Black Pepper.
9.75 grams - 5 grams = 4.75 grams for all of the 9 or 10 remaining H&S (plus some Salt).
1/4 TSP of ground Allspice weighs ~0.5 grams. Add a pinch more and you have 0.55-0.6 grams.
4.75 - 0.6 grams Allspice ~= 4.1 grams for all of the remaining 8-9 H&S (plus some Salt) for a batch sized at 1.6 Cups of Cake Flour.
The "some salt" is presumed to be about 1.2 grams for a batch sized at 1.6 Cups of Cake Flour.
4.1 grams - 1.2 grams = 3.9 grams total for all of the remaining 8-9 H&S for a batch sized at 1.6 Cups of Cake Flour.
There is then a 3 Lb. box of Salt also Added to every 400 Ounces of Flour. 3 Lbs. = 48 Ounces. Scale this to 48 grams for 3.2 Cups of Cake Flour, or 24 grams for a 1.6 Cup of Cake Flour recipe.
Some of us on this forum wish that everyone would standardize their recipes to 200 grams (or 1.6 Cups) of Cake Flour. This is enough to coat about a dozen mixed pieces of Chicken.
