I don't remember it being that dark in the 60's or 70's; it wasn't that light either. Somewhere in between the 2 imo.

You could be correct, but it just may be the image rendering of your monitor as opposed to mine. The problem with computer monitors and pictures is that no two monitors render the image the same way. Brightness, contrast, hue, sharpness, etc... are all over the board, so what I'm seeing in the image is certainly not what you are seeing, or what I would see with a different monitor.

Plus no two KFC Restaurants make exactly the same Chicken. Some are always preferable to others.

It may prove out with testing that sugars only appreciably darken deep fried chicken at or above a certain drop temperature. If one does not ever exceed a maximum oil temperature of about 320 degrees F. (160 C.) at any point in the cooking process the pronounced darkening may not appear. That seems to be my experience at least. Needs independent verification though.
All I know is that most of my early recipes contained 5 grams of Dextrose and 5 grams of Maltodextrin plus 190 grams of flour, plus salt, pepper, MSG, and the H&S. And with my old Dazey deep fryer set at 325 degrees F. my chicken was not coming out dark. To duplicate this with my new Presto Pro Fry I must set it at 300 degrees F., as setting it at 325 F. or greater turns out dark chicken when sugar is present.
300 F. = 148.88 C.
I'm guessing here that the Presto Pro Fry is maintaining temperature at plus/minus 20 degrees F. (11.1 degrees C.), and thus when set at 300 F. it is not exceeding 320 F.

In most instances a sugar sweetener will Brown quicker and darken due to its LOW flash point in heat
