If it is true that "confectioner's salt" was the "two handfuls" thrown into the recipe, which made the chicken the best that CHS had ever tasted, then fine salt:
1. Blends better with the other elements than larger granules of salt which enhances the herbs and spices; 2. Blends better with the flour, which in turn allows it to stick better to the already salt-brined chicken; 3. Must be of major importance to the "Original Recipe" flavor since it so impressed CHS that he said it was "the best chicken he'd ever eaten".
Sorry Yves. How to use the salt is the key to OR KFC chicken. The health mongers and their crusade against salt led to KFC's downfall. Threw the whole balance off.

Back as a teen I can remember over indulging in many a barrel of KFC. Mom and dad took what they wanted and it was game on for me and my brother. And no matter how much you drank during dinner. You couldn't drink enough throughout the evening to feel hydrated.
