I'll be cooking deep fried chicken for my family late this Friday. My recipe presently calls for Tones Chili Powder. Should I exchange that for the same weight of a blend of red and green bell peppers plus cayenne at the nominal heat level of Ancho? I vote a hell ya based on the results I had with Sweet Paprika and cayenne over other things I had in it's place

To change out the Tones Chili Powder for a blend of red and green peppers with a dash of cayenne would be two changes. And we had agreed to only make one change at a time. So the red and green peppers with a dash of cayenne will just have to wait for the batch after this Fridays batch."

I could not have been more wrong about my Tarragon having no odor of licorice. When I mixed up our herbs, spices, pepper, MSG, and salt early this morning (so it can meld), I smelled the Tarragon and there it was, the distinct odor of licorice. When I couldn't smell it in the Tarragon before it must have been because I had first smelled the Star Anise, which explodes with Anise/Licorice odor. The current recipe has no Star Anise ...

yes there should be a aroma with it.
Tarragon is a spice that looses its open package / bottle ETC much quicker then other spices but does have a aroma upon heating BUT once you have lost the fresh Aroma its also not as deep of a aroma.
Its not like a Dill or Caraway Seed, anise, or mace which does not loose the aroma as quick.
Dill Seed is a sleeper of Spice with many NOT explored enough Cumin also a depth of Aroma Horseradish heavy aroma Cabbage heavy aroma Ginger has always been heavy BBQ spice many have a depth from the Blending of the spices and sometimes a smoke additive.

I really do think it's the way to go in looking at a spice to see where it fits in the flavor block(s) you are working on. What it's substitutes may be and then determining what it may replace first in a recipe then look at what it adds. I would do the same, if the tarragon you have has the licorice odor then no need for anise to start with. Only if the rest of the spice fits well and you just need a slight boost to Anise would I add any back.

The plan is to start eating at about 7:30-8:00 PM EST, and some of my family is then going to be staying with us through Saturday evening, so it may be a full days wait before I can see fit to break away and present the overall assessment to the forum. I'm hoping to at least be able to sneak in a very quick/brief early assessment though. Perhaps on the level of a quick thumbs up or thumbs down.
