If you use the example of the type of flavor blocks that make up KFC
I'll use the example from the list you posted before
Salt - Block Pepper - Block Herb - Block Spice - Block
Umami - Block Citrus - Block Earthy - Block Back Ground - Block
So lets pick on the Citrus Block for example as enough people taste that in KFC.
Citrus Block - orange zest, lemon zest, green cardamom, coriander, Earthy Block - coriander, .....
Continue inserting ingredients that seem from previous recipes are common.Then look at where ingredients are ticking off flavors in multiple blocks. So in the simple example above coriander looks like it covers some ground. Plus looking at the Citrus block I'm comfortable to say the answer isn't all of the above either. It's most likely 1 or 2 tops in that block that give it the bit of citrus flavoring.
From there I would look at some of the more complex herbs and spices to see what their highest rated substitutes are. Using the example of Green Cardamom. If cinnamon and nutmeg mixed is one of the them, it clearly leaves out a "citrus" flavor. I probably don't need green cardamom if I am using both cinnamon and nutmeg, but I do need one (or more) of something else in the citrus block. Example orange zest

Earthy Block contain Tarragon. Definitely grassy tasting.

Mustard Powder or Turmeric Powder or Horseradish Powder
I have been asked my though about Mustard Powder Many Times over decade in KFC
MUSTARD powder was Not in every house hold in the 1930's very contrary in fact Mustard was a limited item that was Packaged ONLY by 3 or 4 suppliers. coleman, Keen's, and only few others.
IN the OLD recipe books there are VERY few recipes which call for Mustard Powder. Much more for Turmeric.
Mustard and Turmeric were both used in Butcher as a filler, more then a real spice for flavor. due to its earthy flavor. Which you find in many sausage
The Turmeric was used as a medicine and was in NOT only General stores it was a Pharmacy item.
Turmeric was used in many southern recipes, and some chicken recipes.
I have been always been discredited when I say say USE Turmeric NOT Mustard.
My Restaurant's and Catering Have Big containers of Turmeric and small Tins of Mustard Powder.
EITHER can be used in Recipes BUT Mustard must be listed as a allergen and Turmeric does NOT

Turmeric also has 2 other distinctive features a Aroma and a color factor much more then Mustard. Cooking Mustard has less Aroma the Turmeric. especially when heated.

Trying to stick to the most "popular" of the ingredients listed in the majority of recipes
So far:
Citrus Block - orange zest, lemon zest, green cardamom, coriander, caraway seed, Lemon Pepper Herb block - basil, coriander, oregano, dill, rosemary, thyme, tarragon, marjoram
Question: Is the herb block and earthy the same ?
Still a Spice Block
Is the Eugenol and Umami block the same ? - Thinking of where the "licorice" tasting ingredients belong. Just looking at blocks that capture the taste areas.
I think a Sweetness Block is present. Do others sense a sweetness? It could be from the powdered milk only. But I think it's there.

Eugenol is not in the Umami group. Yeast Extract, Mushroom Powder, MSG, IMP, and GMP would be in this group.
I like the effect of adding some powdered Dextrose (pure corn/maize sugar) along with some Maltodextrin powder. I seem to be the only one doing this.
Maltodextrin does not add sweetness. It adds only what might be elusively referred to as 'body' or 'mouthfeel'. It adds no flavor at moderate levels.

It's a stretch, but perhaps maltodextrin could loosely be considered to be an Umami.
