There was salt in the 40 Ounce bags had salt included and the 26 Ounce Bags were straight Herb and Spice with MSG.
The 26 Ounce Bags had no salt. BUT it Contains MSG so then there was 14 Ounces of Salt added.
I guess as a Principle that make it almost 1/2 the amount of Salt compared to the Spice & Herb added to the Mix ?
when you look Back into the History of KFC New Age KFC Corporation they added 48 ounces of Popcorn Baker Salt to 25Lbs of Flour Plus the Seasoning.
which would have been just under 2 ounces of salt per pound of seasoned flour. When you compare it to todays 3Lbs to 18Lbs it would work out to over 2.6 ounces of salt in 2021.
which you can taste in the Difference between the 1960's to 1980's chicken and todays KFC chicken more salt the Herb and Spice.
The Problem I see with the OR chicken is two fold. Its been so long since most people have had it and dementia has kicked in all they remember is it was way better then the NEW AGE NO FLVOR chicken.
So my Advise YOU know that current KFC New Age KFC uses 3Lbs of Herb and Spice to 18LBS of Flour and you think its DULL and NO flavor.
That should be a Tip that the spice amount level is too low. So start with a amount of Spice and Herb close to that Percentage then Add the Salt to your Preference Amount.
I would also advise if you HAVE NOT tried using FRESH HERBS Chopped up and Fresh Ginger, YOU should try it YOU flavor will be way better or use a mix of Fresh and powdered. The Fresh will act like the Extracts New Age uses. BUT the Flavor is a NEW experience.
