Flavor Enhancer 621 = MSG
The salt in the 740 gram bag is the salt within Garlic Salt. All other salt is added separately, albeit that some comes from salt and MSG brining. My salt total presumes no brining. Lower the 1500 grams to ~1360 grams if you brine your Chicken.
Interestingly enough though, the 740 Gram bag does not list Garlic as an ingredient.

Remember that Bag is from Australia They have different Laws of listing ingredient(s)

I hope to update the cold left overs later today. I can now officially admit that cold and soggy refrigerated chicken is a big hit with me. About 6-1/2 hours ago I had some Deep Fried Chicken from a local Italian style restaurant and Pizzeria. I've had it multiple times before. It's very Oregano forward. It was run of the mill for them, and not all that good. A few pieces went into a Ziploc bag and into the fridge. Now, over 6 hours later, it tastes appreciably better to me cold from the refrigerator.

I can verify as a result I need to add back more black pepper as I had suspected. I did have one thing poking a bit more through than I'd like which I believe to be the Rosemary. However, although I may cut it down a hair. Cold is where the touch of garlic in the marinate proved a nice touch. I wonder if I should do the same amount but instead of all garlic. I'd premix onion and garlic 50/50 and add that in the marinate.

For those scratching their heads about now and wondering what the significance of 740 grams is: There were different size Bags made for different size of locations. Larger Volume locations ordered Large Item Quantities and smaller locations like Malls or satellite branches had smaller Bags due to product sales and size of location and space for supplies

flg, did you notice any benefit from bumping the MSG up to 6 grams for your last cook?
