For this cook I am going to try a couple things new to my recipes. I will not be using savory or marjoram. And while I think most people feel marjoram is a given. What I want to do is try rosemary for my first time. I am also cutting down the list of ingredients to what I have used in the past.
I started first with a "less is more" concept. Use less ingredients and focus on ratios more. So heading down that route and using my spice handbook I came up with a recipe. The less is more fit in with the discussions around Shelton Winston and his interview. @eastfrisian has a thread where he deciphered a hand written recipe and notably for me. A handful of those weights lined up with my recipe. Pepper was one of the differences. So I went back and looked at the 99x scientific research and it appears my pepper may have been a bit too high. So I adjusted that and have been sitting on 2 versions that I am considering. The difference really comes down to the pepper vs ginger weight. Recipe A fits the Shelton story a bit better. Keeping in mind my bias that the 13g missing was garlic salt.
I am leaning a bit more towards recipe A but open for your thoughts. I have penciled in MSG @ 10g. But I most likely will go higher.
Recipe A Shelton story:
2.5g White Pepper
2.0g Black Pepper (fine, course 50/50)
1.3g Garlic Salt (1g Salt+ 0.3g Dehydrated ground Garlic)
1.0g Coriander
1.0g Sweet Paprika/Cayenne (0.7g paprika + 0.3g cayenne)
0.50g Ginger
0.50g Sage
0.35g Rosemary (Dried)
0.35g Thyme (Dried)
0.25g Allspice
0.25g Clove
Recipe B Shelton story:
2.5g White Pepper
1.5g Black Pepper (fine, course 50/50)
1.3g Garlic Salt (1g Salt+ 0.3g Dehydrated ground Garlic)
1.0g Coriander
1.0g Ginger
1.0g Sweet Paprika/Cayenne (0.7g paprika + 0.3g cayenne)
0.50g Sage
0.35g Rosemary (Dried)
0.35g Thyme (Dried)
0.25g Allspice
0.25g Clove
