Correction, Ledington's when using Tablespoons for everything except Pepper (which would use Teaspoons) has ~45 grams of H&S in 200 grams of Flour.

The repeated messages of deepfriednew101 that thoughts of the corporate 26 ounce bag must be abandoned and that H&S levels must be increased got me thinking of a potential new recipe attempt. I needed a benchmark, and I chose Eugenol. Then I turned to Glen and Friends Cooking's KFC episodes 9 and 10. In episode #9 the Dustin recipe was the winner, and episode #10 it was all about Grace's recipe. The first thing I noticed was that Dustin's, when scaled to 200 grams of flour has ~0.30 grams each for Eugenol delivering Allspice and Clove, and the second thing I noticed is that Grace's has zero Clove, but elevates Allspice to the highest level by which to compensate as to Eugenol. Then I discovered that Clove is 180,000 ppm Eugenol, and Allspice is 36,000 ppm Eugenol. Then I asked: How much Allspice must one use when not using Clove (as for Grace's) 0.30g. Clove x 180,000 ppm = 54,000 54,000/36000 = 1.5 grams Allspice 1.5 grams Allspice + 0.30 grams Allspice = 1.80 grams Allspice So I assumed that for Grace's when scaled to 200 grams of flour there must be 1.80 grams of Allspice. And everything must either remain at 1.80 grams or go down from there. And that leads to:

And for those who really like to see weighted ingredient 'drop uniformity' (such as for myself), the evenly descending H&S ingredients version. As an old saying goes: "good things come in threes" (or is that "bad things come in threes")?

I've dallied about with recipes of late, but now its time to get down to the business of cook session #11. Since Paprika is given to us as one of the 11 ingredients, I've dropped the Crushed Red Chili Pepper and replaced it with Paprika, and re-formulated as follows:

Thanks! But will it have the right flavor? It contains a lot more Herb and Spice mass than I've ever used before. About 50% more than my previous most weighty ever H&S batch that was actually cooked. And roughly 3 times more H&S than my typical cooked batches that were scaled from the 26 ounce bag concept.

Cooking is 'Go' for recipe #11 later today. Any last minute change advice? I'm still tossing around these two recipes:
For #12 (which could yet become #11 if I get feedback that persuades me) the White Pepper is reduced due to the red pepper component of the Chili Powder. Despite #11 stating 14 grams of MSG, both recipes will likely get 15 grams of MSG. I'm slowly giving up on struggling to have everything from the MSG on down sum to perfect whole number target weight values.
