Silver Interesting path your going down, one I have not seen pursued so diligently! How do you prep the seeds? Are they ground fine (dust) or coarse ground? I did make a recipe once that included coarse ground celery seeds and liked it fine. I'm on a POPEYES chicken recipe kick at this time but I'm watching where your headed with this. I will definitely give your recipe(s) a try! CFC Thanks crazyforchicken! I combine the Salt, Pepper (except coarse), MSG, Celery Seeds, etc... in a well cleaned out and dried coffee grinder and grind it for what I'd guess to be about 8 seconds as an average. Pretty finely ground (close to dust for a good portion of it) at that juncture.

I've never had POPEYES chicken, unfortunately they have no franchises here in Nova Scotia...yet! There is a rumor that 1 is coming in 2022. I anxiously await its arrival. I've tried 2 recipes I found on youtube, but I was not impressed at all. For something more like Popeyes it might be best to use 180 grams flour plus 17 grams cornstarch plus 3 grams baking powder, rather than 200 grams of straight flour. It should be crunchier that way. Popeyes chicken is very crunchy and it is also very thickly coated in breading. I wonder if they make a liquid batter from their breading. Some light lager style beer might work to turn a dry breading/coating into a batter that will puff up upon deep frying.

Some crunched up (but not ground) Corn Flakes as part of the Flour might also benefit the Popeyes style.
150 grams All Purpose Flour 30 grams Corn Flakes lightly crushed under a Rolling Pin 17 grams Cornstarch 3 grams Baking Powder Salt, Pepper, MSG, and H&S
Split the above in half and wet half with beer to where it is somewhat thinner than for a Pancake batter. Egg wash the chicken Dip egg washed chicken into dry coating mix Dip chicken in batter mix Drop into deep fryer
I don't have experience with batter dipping, so the process I'm envisioning above may need revision.
I have added Cornstarch and Baking Powder, and it does crisp up the coating.
My wife makes chicken coated in crushed Corn Flakes and it is delicious.

To this I might add that one of the ingredients found within Corn Flakes is sugar in one form or another (or perhaps in several forms, one of which being corn sugar). Sugar makes things (including deep fried chicken) taste better. It has an impact here that is analogous to (yet not identical to) Umami, such as for MSG. And some part of this is due to the observation that ~87% of the weight of a molecule of MSG rests within its sugar anion, whereas its sodium cation is only ~13% of its weight. So by either bumping up sugar, or bumping up MSG, one is bumping up sugar. Sugar should not be ignored in the search for the 'note'.

Unsweetened Kellog's Corn Flakes states 2.7 grams of Sugar in every 100 grams of Flakes. The chicken which my wife makes with a 100% Corn Flakes coating tastes sweet.
