To me the recipe seen immediately above has a lot of Cayenne. It seems as if it would be ripping with spicy heat, more like a Hot &v Spicy version of KFC. Could this be one place where I'm way off the mark?

My intuition and cooking experiences to date lead me to believe that something along the lines of this recipe proposal should be knocking upon delivering more of the full song 'note', while at the same time fully complying with the 26 ounce bag.

Good intuitions should always come in twos. Or at least that's going to serve as my excuse for posting this derivation upon the above recipe. It has the Cumin component of the Tone's Chili Powder that has served me well in several past recipes (sans that I've suspected Chili Powder of darkening my Chicken too much), plus it gets rid of the Star-Anise and Clove. And by replacing 2 with 1 it has 11 H&S as opposed to 12. Plus it fully complies with the 26 ounce bag.

For both of the above recipes, if you don't like Tarragon, my suggestion is that you replace it 1:1 with 'Summer Savory'. My wife and I have come to like Tarragon, and we both generally agree that Savory tastes awful. Tarragon brings in a bit of anise/licorice flavor, which is something that Savory completely lacks.

Here's the obligatory next day (leftover) eating report on the Celery Seed chicken:
Flat out the tastiest cold leftover fried chicken I've ever eaten, hands down. Amazingly everything was in perfect (and I mean perfect) balance today. The intermingled Pepper, Salt, MSG, and Celery Seeds flavors were unbeatable. KFC simply doesn't come close to this chicken when day old and cold. Words simply can not express the joy of eating this recipe the next day. If that's not the 'note', then who needs it! Amazing stuff!!!
I absolutely can't wait to deep fry this recipe (as opposed to Air Frying it).
Now I'm wondering if Celery Seeds at about 4 grams even in 200 grams of flour combined with 0.50 to 0.60 grams of Allspice (plus the obligatory Salt, Pepper, and MSG) might literally rock the house and knock it clean out of the Ballpark?

A while back deepfriednew101 suggested that I needed to increase my Celery Seeds weight/content right after I first started to add Celery Seeds at between 0.30 grams and 0.50 grams in 200 grams of flour. And he was spot on!!!!

Perhaps various of different Deep Fried Chicken recipes featuring the obligatory/standard "core" of Salt, White and Black Pepper, MSG and flour plus one added Herb or Spice should be cooked whereby to get a good handle on the flavor capabilities of each herb & spice individually.
I can envision:
The core plus Tarragon The core plus Sage The core plus Thyme The core plus Allspice The core plus Savory The core plus Rosemary The core plus Coriander The core plus Ginger Garlic, Onion, Marjoram...
If the core was made in advance, and then segregated into about 6 to 8 equal amounts, and then each Core Breading 'aliquot' was mixed with only one individual spice, and a single leg or thigh (my preference) was coated with it, multiple different spices could be tested for their flavors in a single cooking session.

Silver Interesting path your going down, one I have not seen pursued so diligently! How do you prep the seeds? Are they ground fine (dust) or coarse ground? I did make a recipe once that included coarse ground celery seeds and liked it fine. I'm on a POPEYES chicken recipe kick at this time but I'm watching where your headed with this. I will definitely give your recipe(s) a try! CFC

Grind everything from the Salt on down (sans for the 'Coarse Black Pepper') in a coffee or spice grinder. Found the answer on pg 75 CFC
