Indeed by exceeding around 3-4 grams for MSG and adding instead something along the lines of 20 grams I'm at more like 16%, but then again, MSG is not classified as a Spice. But I add it at 15-20 grams because it works.
28.7% of 200 grams is 57.4 grams. That seems to require the inclusion of Salt.

I'm of the opinion that the ability to taste a Spice at 0.10 grams in 200 grams of flour is dependent upon the relative culinary (flavor and aroma) 'strength' of the Spice. I'm convinced that for one example, Star-Anise makes a recognizable contribution at that level. And so do Clove and Cayenne Pepper. Others certainly may not, particularly if they are weak. I would have loved to challenge you on that claim, but we are thousands of miles apart I'm afraid. Physically. I do not believe that the success of a recipe or note depends on nuances or quality deviations. The battle is won on the big field, that is, proper ingredients, correct ratios.

That is a ratio of 6% to 94%, with the seasoning bag already containing salt and MSG. But I don't know the ingredients of the flour bag. If there is salt too, my numbers are not correct. Do we know anything about that? You have 57,4 grams of h&s, salt and MSG in your latest recipe, to 200 grams of flour. That is 22%. (The 28,7% were baker's percentages).

I just tried something with my last piece of Recipe #9. I sprinkled MSG onto it. Closer, but still not a clone. It did however give that nice lingering MSG aftertaste that I get when I taste the real thing. But the spice component(s) required of delivering the full song 'note' were just not there.

Given that I've discovered that I really like the taste of Lee's Famous Recipe Chicken, and also given that the newspaper clipping deepfriednew101 came up with revealing that per a court decision Lee's is restricted to only 5 Herbs and Spices beyond Salt, MSG, and Pepper, and with @eastfrisian 's valued input that beyond the top handful of contributors you might not taste the minor ingredients anyway, I've come up with this: All comments are welcome.

If the Tarragon rubs you wrong, you might consider substituting Thyme in it's place.

I originally posted this in the 26oz bag thread. Adding here just to keep things flowing.
I was thinking about this last night to see how I may be able to rough-in my "less is more" recipe into weights that would match the 26oz bag. My current recipe I have already reduced H&S in favor of more MSG.
Starting point - I need to find a constant. One thing right or wrong is I have always had some faith in the story told by Shelton Winston. That is to say he was given a 100g recipe from CHS for the OR. But it was missing 13g of something. I have always felt that is was Salt. I could go through the "why" but for now this will be my constant and unfortunately also my bias. So scaled to a 10g recipe like we make (plus MSG) is now 1.3g
So a possible recipe:
6g MSG 4g Pepper (B&W) 1.5g (H&S) 1.3g Salt 0.2g Garlic
Could easily see why some people say today's KFC is just MSG, SALT and Pepper. They combine to around 88.5% of the recipe using the above thresholds.

If you dropped Savory in favor or Thyme. By adding Marjoram you end up with Glen's recipe Ireland.
If you drop Allspice for Thyme and Marjoram you also get ...... Canada
