The main difference between my version 1 or 2 of the next cook becomes the level of sage. And how high I drive it at the expense of red pepper and savory. Is sage one of the heaviest ingredients next to the peppers? Or does it sit lower behind things like coriander?
Hmm...
I do like sage. And I think in the 99x scientific research it was higher than coriander and ginger etc.
I may have answered my own questions.

No way you can't get something that tastes better than the modern greasy tasteless mess today with just MSG, SALT, Pepper and Garlic. I only tasted the other ingredients in a spot of under cooked greyish breading one day MSG, Salt, Pepper, and Garlic may be about all they use anymore. And perhaps in that order. I stand corrected as to a limit for MSG. Earlier today I doubted that there is a tolerable limit, but eating KFC_OR today taught me that there is a tolerable limit, and it had been exceeded.

From memory here: The ingredients list for 99-X lists Sage right after white and black Pepper, so it has to be at a higher quantity than the remaining H&S that come after.

I just had a bazaar thought. With MSG clearly listed as the main ingredient within the '26 ounce bag', what is to preclude MSG from constituting 50% or more (by weight) of the content of the 26 ounce bag?

I'm becoming ever more convinced that what we perceive as "the note" in (present day, if not also days of yore) KFC_OR is merely MSG. This is not to say that in days of yore there were also more H&S (and more actual as opposed to flavor extract or otherwise synthesized or enhanced H&S) in the mix whereby to make for a much better flavor profile.

Sage should be a higher level yes I wonder why Glen's final video indicated that for both Grace's and his 'secret Canadian source' Sage was well down the ingredient list order. Note also that Grace's contains zero Savory, whereas the 'secret Canadian source' contains no Allspice, and also puts Savory in the position of being the main H&S by weight.

I just revisited my cooked recipe #6, which I indicated as being a failure with little presence of the 'note'. That recipe had 3.5 grams of MSG and 0.07 grams of I+G into 200 grams of flour. My current (reflective, or retrospective) thinking is that had #6 contained either 15 grams of MSG, or (more speculatively here) 3.5 grams of MSG plus 0.35 grams of I+G, the 'note' would have fully bloomed.

Observe that the recipe from Glen's 'secret Canadian source' contains no (appreciable) Eugenol bearing ingredients. The 'note' can't be derived from Eugenol if this source's recipe contains any hint of the 'note'. I wish Glen had actually cooked and made comment upon the recipe from his 'secret Canadian source'.

I hearken back yet again to the prevailing commentary within Glen's series of videos that repeats for each of the attempted recipes "something appears to be missing, or lacking". And I conclude that the missing/lacking "something" is the sufficient addition of MSG.
