Should name this one "The KFC Kitchen Sink Recipe". (just kidding). I honestly think it would be great to cook this one up. It's only shy of a couple of ingredients everyone claims is or has been in KFC. Scale it back to something small as to not waste too much if it doesn't work out.
The thing that still bothers me is Anise, Star or Seed. I can't see it being widely popular and available in the 40's and 50's and maybe into the 60's. And old cooks would have gone by rule of thumb that star anise was removed from dishes and anise seed was left in. Grinding Star Anise in North America would have been fairly rare I think in that time frame. And did Claudia grind these up all day? Not saying it couldn't of happened but it just doesn't sit right with me.
I am at .150g for 200g of flour of Anise Seeds. And I don't think I'd go much if any higher, tad if anything. Measured out it's about 15 seeds smaller than fennel. Seems so tiny and I have to grind these up by hand. I looked a bit more at basil last night and it has an anise type flavoring apparently. I am going to look into that more. I wish there was a way of determining how much anise flavoring were in things like Basil and Tarragon etc.

A basic Poultry Seasoning would make it fit into 11 Herbs and Spices

A basic Poultry Seasoning would make it fit into 11 Herbs and Spices Would that 'single' spice cover for these four: Sage, Savory, Marjoram, and Thyme

Spice blends with multiple ingredients. Is that how CHS actually did it for KFC_OR whereby to limit it to 11?
Perhaps I should show it as 4.4 grams of Poultry Seasoning instead of the individual Sage, Savory, Marjoram, and Thyme.

Since the Tarragon is delivering the anise/licorice flavor, should I drop the Star-Anise? The last time I used both the licorice taste was a bit overwhelming. But with this one the Tarragon is at the same level, while the Star-Anise has been reduced to only 1/3 of the level it was at when I was overwhelmed by it.

Keep it but as you mention reduce it from what you had tried before. If you go to 1/3 and it's still too much. Then your answer is clear, you won't need it going forward with the level of Tarragon you use.
You almost have to cook that Kitchen Sink recipe!
