If current plans hold up my family will be gathering on the evening of Friday Oct. 15th for our first ever family-wide head to head taste test against real KFC_OR. If everyone makes it there will be eleven of us sampling the recipe as seen below side by side with KFC's Original Recipe Chicken. I've doubled my 'Edition #7' recipe for the occasion, and also taken the liberty to bump up both the white and black pepper quantities by a very small amount.

How did you feel the ingredients were from 1 - 11 or a part of the list like 5-11 etc etc.
Did you find them a good level of Herb and seasoning
After you eat the cold chicken parts today, it could give you a better idea.
if you think the mix was weak instead of Bumping 1 or 2 of the 11 items BUT all 11 up some. I know you choose to already bump up the pepper.
I tell people to always start with the Lowest amount spices or herbs to bump up first. Most tend to bump the 1-5 spices which already have higher amount of spice. sometimes bringing the lowest amount spices to a higher weight brings out the taste and aroma which is not peaked

you can try numbers like this and add the lemon instead of a lemon zest or orange zest
3g White Pepper 2.5g Black Pepper (fine, course 50/50) 1.5g Lemon Pepper 1.3g Garlic Salt 0.8g Coriander 0.6g Ginger 0.5g Allspice 0.4g Thyme 0.4g Sage 0.4g Sweet Paprika/Cayenne (60/40 blend) 0.25g Summer Savory 0.30g Clove 0.20g Anise Seed 0.20g Marjoram

Batch #1, had a hint but no were close to what it should be. I tried cold skin only on Batch #2 and I think the pepper could be a tad too strong. Like just a tad. Warmed it was right on the line. Could a bit of an after bite I'd like to deal with. I will wait 1 day and then Microwave what's left as a final statement to any changes.
Where I am leaning for next time.
1 - Cut back I think on the White Pepper - Perhaps set it to 2.5g to match the Black Pepper. The extra 0.5g for would be added to the MSG as a placeholder 2 - Move to a 16% spice to flour ratio as I still think it could use a bit more. This would be accomplished by lowering the flour and keeping the 13g mix the same. 3 - Move salt up by 0.5% to 12.5%.
So I'm thinking 80g flour, 10g salt, 13g H&S including MSG
This would set my salt @12.5% ratio to flour and my H&S/MSG to 16.25% ratio to flour. With the only adjustment to the spices as per #1 above

I think that will then give me the right amount of flavor to then fine tune the H&S

I believe that items #1 through 11 represent 3.84% of the overall total weight of the recipe. And with white and black pepper included among the H&S the total is about 4.9% of the overall recipe weight.
