Let's see where I land on my 60/40 Sweet Paprika and Cayenne mix. I have multiple types of Paprika by various manufacturers. I find them all different in their own way. I do a fair amount of BBQ and Smoking of meats so Paprika is a mainstay in the cupboard
Silver - I see orange zest is back firmly in #7. I may look around to find some.
Star Anise - I waited along time but settled on Anise Seed in place of Star Anise. Partly as it was a bit easier to find, partly because everyone moved to Star Anise. But mainly because a few older recipes like one I posted called out for Anise Seed and stated NOT Star Anise. Knowing their flavor profile is similar. In the spices I have melding, I only have .15g which looked like 15 tiny seeds when weighed out. I went old school on them mortar and pestle and took my time crushing them to powder. Just that tiny amount had a powerful licorice smell.
As it was the last ingredient I added to my spice mix. I noted the licorice smell was not there. But it did impact the overall smell I thought in a good way. But the taste will be the answer.
Chicken wings were ridiculously priced at the store around from me. So I went drummies like last time. More meat and a better price so those will be the next cook.

Many Bulk stores have the Lemon and orange zest.
you will find a great paprika and cayenne blend
Drums work if they are cheaper also

I will not dispute the Paprika is made with Bell Peppers BUT taste a sweet bell pepper flake and taste paprika and the two are a different strength, and taste. in 1930 they put the sweet Bell pepper in with Cayenne they did not mix Paprika and Cayenne for a reason strength of flavor I understand now. It's clear from the image on the old spice tin that McCormick also adds green peppers to what they are referring to as "Sweet Pepper Flakes" (as opposed to Paprika). This alone would unarguably give it a flavor that differs from Paprika. Does McCormick still offer this?

Deepfried101 - Do you have Bulk Barns in your neck of the woods? There is one literally around the corner from me but I bet I have only been there 10 times in 25 years. More so when we had kids at home wanting to make stuff for school. I kind of strayed away from bulk spices. Worried about freshness mostly

They are a Good Source for Tons of Spices, and a reasonable Price for what Amount you want.
They should Have more spices then ANY grocery Store. They Usually have a isle with 3 rolls and 70 spics or more.
As for quality they have been the same as most other places for quality.
Are they the Best possibly NOT but Price and Availability sometimes works.
As a general rule I just BUMP up the amount a little if I think its a weak spice.

Getting ready to cook something else today and pulled out my herbs de provence. Talk about a blend of ingredients that hit the mark.
Black Pepper, Rosemary, Savory, Thyme, Oregano, Salt, Garlic, Onion, Red Bell Pepper

Herbs De Provence has many of the same items that was in many Italian seasoning in many years
some have said it was just labeled different in other counties
Black Pepper, Rosemary, Savory, Thyme, Oregano, Salt, Garlic, Onion, Red Bell Pepper
if you look at the Items that Gloria P spoke about it has ALL the items in the Herb De Provence
we have used Italian Seasoning and Poultry seasoning combination on many time for the Herb and Spice in many dishes

If all goes as planned. It's cook day.
One batch 100g - 6.5g - 12g flour-H&S-salt One batch 50g - 6.5g - 6g flour-H&S-salt
Keep in mind I use Garlic Salt as part of my H&S. So extra salt will come from that.
I think I will season the flour at noon and let it meld until 4:30

well you will see a comparison a
6.5 % Herb and Spice, 12% Salt to Flour rate 13% Herb and Spice, 12% salt to Flour rate
it will be a great taste test for you
are you using a Milk & Egg Bath first ?
when we made KFC in the 1960's and 1970's salt was added to the Milk and Egg. in top up situations to get more salt through the whole chicken in many cases.
