[/quote] Respectfully, why mess with allspice more instead of iterating on your successful #17? I think you already found that a lot of allspice overloaded the cinnamon area? It had the good aroma factors of: low herbs, clove, mace and nutmeg, which I’ve noted in other good aroma recipes, sometimes with sweet basil (which some have ruled out), but which is heavy in the same compound as coriander (linalool). Items to explore wrt to #17, for instance, might be: fennel vs anise seed, testing the addition of caraway seed fine tuning levels of sage, mace / nutmeg and coriander for taste and aroma, and the effect of cinnamon vs no cinnamon. Perhaps I don’t understand the reason for the various outlier recipes posted and whether feedback is being solicited or not, or whether in general you intend to cook and report on them. We could obviously write programs to iterate ingredients and swap eugenol and capsaicin levels etc., but without a clear goal, it doesn’t seem useful. I think collaboration is very useful, and cooking is the ultimate arbiter or whether a recipe “works” or not, despite how it might look on paper or taste in the mixing cup. I enjoy reading your recipes, but knowing they will be tweaked, cooked and reported on is the most enjoyable of all.

I'm somewhat a Quaker (or at least I come from a long line of Quakers. and my wife still attends a 'Friends' church).
Not that it matters, but (initially at least) only people who were bent upon insulting them referred to them as Quakers. They are officially the "Society Of Friends". They seem more tolerant of being called Quakers these days, though they prefer to call themselves "Friends". At one time nigh on everyone housing escaped slaves and secreting them to Canada pre our Civil War was a member of the Friends Church. They were the first Abolitionists. They started the Underground Railroad. Yet thy seem to get little credit for it.
My Dad's middle name was Friend. At least until he signed up for Social Security and then voluntarily entered the Army (a voluntary hitch pre WWII, which he got stuck in for the duration when he had only about a week or so to go before becoming a civilian again) and signed up for both using the middle name William. Effectively my Dad jumped ship on the Friends.

It's merely an experiment. Sort of a last chance for Allspice.

I only cook about one out of every ten of my proposed recipes. Hopefully others will try the ones that I don't. And report back honestly.
If #17 is 'game over' (such as my Wife is convinced that it is), then I wouldn't have this avenue of enjoyment any longer. Gotta make it last...

I can say that There are few that cook ideas like we do
Over the weekend we Cooked 35Lbs of chicken Drumsticks. 60Lbs of chicken Thighs 40Lbs of chicken Wings
at 1 function and we were allowed to Use any recipes we wanted, The wings or any chicken we also would season to Flavor Dry shake and tossed after Fried
In all the years I have promoted Brine as CHS could have NEVER kept Fresh chicken in his Car without it being Brined. NO WAY NO HOW as he slept in his Car and often did not have Ice available. So Brine Had to be used.
CHS and Leon Pete Harmon Did BOTH agree the when CHS made "Pete" Leon and Family supper then could ONLY get Frozen Chicken that day and the chicken had to thaw before cooking. That is Part of the reason the Supper took time to prepare compared to the chicken CHS usually had in his Car But on the Trip to Salt Lake City CHS took the Train as he was Flying to Australia the next day.
CHS always Soaked Frozen Chicken in a Brine to Thaw quicker also

We will NOT cook ANY CHICKEN for a Original KFC CHS CHICKEN unless it's Brine or Marinade, tenderized
There is NO comparison and the ONLY way we can achieve the Original KFC Chicken pre 1980's
It's the Only way to get that OLD time red hue around the bone and a real juicy flavored meat to the bone in our opinion.
KFC New Age would have never spent the Millions prior to the crispy chicken to set up the Marinade tumblers that Failed miserly, and were a Pain in the chicken gizzard.
We have 2 Brand New Tumble Marinade KFC never used from the 80's in the Boxes and memorabilia they were such a wrong item especially if you had NO SPACE.
A tumble marinade is a Great Item for the Ribs Beef and Pork or steaks unreal and we use them for that purpose.
Vacuum Sealer work the best for chicken in a rush
current chicken processed has more preservative then Tenderizer Brine
Final thought and our opinion Chicken MUST BE BRINED for a Original KFC 100%

I meant to say I was "shiftless". I cooked today with new oil. When I got my 1998 KFC manual, I discovered there is a special manual involving the oil replacement, which I was not given. Now I know why. Conclusion: Extracts and oleoresins are, and have always been used. KFC package weights are meaningless. My basis was a 40 to 50 oz seasoning bag, plus two days of dry brining. Not enough. I'd bet my bottom dollar that originally, some of the seasoning KFC oil was saved to flavor the new oil. Just like that hamburger joint back East that adds new oil to the used oil. Supposedly it is stored, and is over 100 years old. I'm cooking again in a few minutes with handfuls of this, and pinches of that thrown in. I had a dream last night that I was CHS (don't call the psycho ward, yet) and was experimenting with mixes. Maybe worth looking in to.
