they Base it on How much real milk and egg was to be used and convert to powder
Conversion for the Real Milk & Egg Warsh to Powder Milk and Egg Powder.
15.5g Milk powder 2 Tbsp = ½ Cup milk equivalent 13g Whole Egg Powder 2 ½ Tbsp = 1 Egg equivalent 8.0g MSG 2 tsp
CHS used 1 Gallon of Milk to 8 Egg as listed in the Pressure Cooker Patent
62g Milk Powder 8 Tbsp = 2 Cup Milk Powder 26g Whole Milk Powder 5 Tbsp = 2 Eggs Equivalent
Using less % of either the milk powder or non-whole egg powder will not do anything in a flour mix or limited effect or taste.

KFC puts MSG in everything ?
In some countries they did blend the MSG in the Milk and Egg.
some places they have it in the seasoning Bag and the Milk and Egg or the slt.
There is some where its mixed with the FLOUR
so its a FLIP of the coin BUT they have it listed

No other changes: Flour : 79.051% Salt : 11.265% Powdered Milk : 2.507% Powdered Egg : 1.051% Black Pepper : 1.245% White Pepper : 1.245% MSG : 1.186% Coriander Seed : 0.593% Allspice 0.395% Ginger : 0.395% Anise Seed : 0.198% Cayenne Pepper : 0.099% Dextrose Sugar (or) Table Sugar : 0.099% Mace : 0.059% All Other H&S (the remaining 3) : 0.612%

Why do I fix 8 of the 11 H&S and then allow the remaining 3 to float and essentially become a game of mix and match and/or 'you pick-um'?
In large part it is because my quest to date has led me to the opinion that the "fixed" percentages and ingredients work collectively to factually deliver upon the all important 'note', (with admittedly the actively ongoing presumption here being that Allspice can indeed substitute for real Nutmeg, Clove, and Cinnamon), whereas in large part the 3 "you pick-um" items are (by comparison to the "fixed" category) highly, if not completely, irrelevant to the development/delivery of the elusive yet all important note.
Edit: This is not to say that the 3 floating items are either flavorless or odorless.
Edit #2: Does this mean that the "fixed" items are forever to remain locked down? Answer: No! Reason: There are likely a multiplicity of roads that may factually lead to the note.

Yet another (and hopefully my final) revision. This time to get rid of the sugar kludge addition that didn't fully sit well with me. This revision slightly boosts both Salt and Cayenne Pepper. Still fully 40 ounce bag compliant.
Cake Flour : 79.051% Bakers Salt : 11.344% MSG (Monosodium Glutamate) : 1.186% Powdered Milk : 2.507% Powdered Egg : 1.051% (1) Black Pepper : 1.245% (2) White Pepper : 1.245% (3) Coriander Seed : 0.593% (4) Allspice 0.395% (5) Ginger : 0.395% (6) Anise Seed : 0.198% (7) Cayenne Pepper : 0.119% (8) Mace : 0.059% All Other H&S (the remaining 3 H&S items) : 0.612%
The major "All Other H&S" category choices for selecting the remaining 3 H&S items are:
Sage Savory Thyme Tarragon Garlic Powder Marjoram (sort of a tamed/domesticated Oregano) Mexican Oregano (Lippia graveolens) Mediterranean Oregano (common or [originally at least] wild Oregano)
Pick any 3 from the 8 items listed above, but pick a maximum of only 1 of the 3 from the “Oregano” group.
If you pick a Mediterranean Oregano type, use it at half the weight you would use for Marjoram (wherein for Marjoram I would recommend ~0.138%). My new favorite from the Oregano trio is Mexican Oregano, and it should be used at about twice the amount for Marjoram.

Since Recipe #17 is by far my best to date, I figured I should post a copy of it here:
It was cooked both ways. 1) With Coriander, and 2) with Celery Seed. My Son and I liked the Coriander version a bit better, and my Wife liked the Celery Seed version a bit better. Potential improvements thought of post the cooking and eating experience are as follows: ---------------------------------------------------------------------------------------------------------------------- 1) Bump up the Salt to 30 grams if not salt brining. 2) Add 0.25 grams of Cayenne Pepper. 3) Reduce Coriander Seed to 1.35 grams. (for the Coriander version) 4) Increase Celery Seed to 2.00 grams. (for the Celery Seed version) Me n the better half just had a feed of this recipe usin the coriander version. Incredible is all we can say, and I've tried almost every recipe posted from multiple sites. I brine the pieces for at least 18 hrs before cooking, and pressure fry in corn oil in a PRESTO chicken bucket, then 30 min in a sealed container in a 150F oven. I did a side by side comparison taste test with what we thought was the best recipe, but this recipe is as close as we have ever been to the original we remember from the past 30 yrs ago. !
