Add MSG and either the bag weight needs to be increased, or the overall H&S need to go down in weight.
Allspice seems to be a better fit to the story.

Could it have been white pepper. And prior to that he used only black. Which he reduced added white pepper. It became number 11 and bag weight stayed the same

CHS told Everyone he was A Lawyer, which is acknowledged in History. CHS was the President of the Restaurant National Association. HE was NO DUMMY, He did NOT Patent the Spices and Herbs.
HE KNEW that Celery, Garlic, Onions were NOT Spices and Herbs and there was the 1905 FDA and the Major Court case in 1925 THAT ROCKED the Spice World about listing Celery, Garlic, Onions as Spices or Herbs.
I DO NOT AND WILL MAINTAIN that Salt, Black Pepper Fine, Celery, Onion, Garlic were NOT in the his MIND and WORLD when he says 11 Spices and Herbs no different the he said SPICES first which would imply that there should be 6 Spices and 5 Herbs in the 11.

When when one of the Spice Companies were interview regarding the SECRET 11 Herbs and Spices Term and the 2 companies separately blending THEY WERE QUOTED 1 company Blends the HERBS and PEPPER and a different Company Blends the Spices
Herbs -and- Pepper why did they just NOT say 1 company Blended the Herbs and 1 company Blended the Spices.
Durkee's ORIGINALLY Blended all 11 Spices and Herbs for Claudia after Harland JR Passed away there was NOT 2 Companies.
McCormick also Blended all 11 Spices and Herbs there were NO 2 Companies.
it was after Brown and Massey took over that 2 Companies made the Spices and Herbs AND IT STARTED BECASUE OF SPICE SHORTAGES NOT NOT secret BS. CHS was using more then 1 spice company for a long time. The secret became a Marketing Ploy.

200 grams Cake (or) Pastry Flour 28.5 grams Baker's Salt (or coffee grinder crushed table salt) 15 grams MSG 2 grams Dextrose 4 grams White Pepper (1) 2 grams Black Pepper (mix of fine, coarse, cracked) (2) 1 gram Dried/Crushed Chili Pepper Flakes (think Pizza Parlor) (3) 1 gram Celery Seed [preferred] (or) Coriander Seed [if allergic to Celery Seed](4) 0.5 grams Sage (5) 0.5 grams French Tarragon (or) Sweet Basil (6) 0.25 grams Allspice (7) 0.15 grams Clove (8) 0.15 grams Thyme (9) 0.15 grams Summer Savory (10) 0.15 grams Mediterranean Oregano (11)
Grind everything sans Flour, Baker's Salt, Black Pepper)

If my currently melding Cook Session #14 recipe doesn't pan out, this may become the basis for attempt #15. #14 will need to wait for Easter, and a projected ton of Easter leftovers, to pass.

I’m pondering the pepper ratio for my next cook. Lots feel white pepper is heaviest. However a couple published ingredient lists including Ken’s have Black Pepper heaviest. In my own personal taste and recipe I felt I needed the black pepper to be at least 3g into 200g flour. I’m really thinking a 4-3 with white on top. I am tempted to go 5g-3g into 200g flour next attempt.

I would say the 5-3 would be closer in Ratio.
Claudia had 3-1 white over Black.
some people have ran with a
3 Part White Pepper 1 Part Black Pepper Fine Dustless 1 mart Black Pepper Medium Grind 1 Part Black Pepper Cracker Large
When they have use this they typically use a less % to Flour ratio of Pepper.
My Tip
White Pepper, Black Pepper, Paprika, Sage or Oregano Fine Powder, Rosemary will be in the Pepper side that you need to Key in ON.
Try these mixed together in a separate Bowl Do Not Grind them with the Other items
then add the pepper into the Flour and mix then add the other items last NOT all grinded together
when you high speed grind Coffee grinder the Pepper side OIL hits the other spices and kills any full flavor they would have a chance on there own pre-Cooking.
THERE IS NO NONE ZERO spice maker who grinds all at on time. they are all added separate and slow speed mixed

Since my "Fun One" recipe was so far the family favorite. I'm going to go back to it at this point. As mentioned in the other thread. Getting pepper right is really the focus for me.
Fun One 2.0
6g MSG 4g White Pepper 3g Black Pepper - Combined represents the highest I have gone 2g Farm Boy Seafood Seasoning 1.5g McCormick's Poultry Seasoning 0.5g Coriander 0.5g Ginger 0.25g Clove 0.25g Allspice
Into 200g flour with +/- 28g salt (will vary with marinate)
Pre-packaged Seafood Seasoning is:
Dehydrated Vegetables (onions, garlic, tomatoes, red bell pepper, parsley, spices, orange peel, canola oil.
