some people are saying there are photo's of 100LBS barrels with spice mix in it
If they are available some should be down loaded to the site here.

I use the 100lb barrel calculation and added it to the spreadsheet I use when working up a recipe. Just to see were my recipe comes out. I don't think it has to fit into the 100lb barrel. But what I like to see is the larger amount of each spice required when mixing a large patch. So my working spreadsheet has grams the equivalent tsp/tbps the 100lb barrel and a 5lb recipe.
For me I prefer to see that the grams work out to a standard measure in tsp/tbps. That it's a nice even amount in the 100lb barrel and bonus if a 4 or 5lb recipe is also nice even numbers
So 1/2tsp of something that converts to 1g that equals 5lbs in a 100lb barrel and 1/4lb in a 5lb mixture. Are appealing measures to me

If the grams convert to odd fractions of tsps and and odd amount in the 100 or a 5 lb mix I think that's a tip off it's not the right amount. If you were Claudia mixing this in either 5lb, 10lb or whatever batches 1.37lbs isn't a weight you want to deal with

Claudia used Portion control cups they figured out how much spice worked with Portion cups and mixed it that way into the Lugs mixed it then poured it into the Barrels for storage.
The 100 LBS Barrels were originally MSG Barrels. THERE WAS NO SPICES SHIPPED IN 100LBS barrels in those days they could not move them around the MSG was shipped that way for a Ocean Trip. Spices were shipped in Bags and sacks on the ships. The countries where Most spices came from were bagged. The MSG was made in a Commercial Plant and China had barrels for it.

And I am guessing the portion cups worked out to something relatively even. So this portion cup holds 1/4lb of Thyme as example. Not 0.187 Lbs

CHS Never waisted ANYTHING and when I mean anything he recycled the Lard, Potato chip metal tins for storage also.
OLD Soup Cans and OLD Metal Tins worked Great for Portion Control cans. Bigger Tomato Cans Also worked Perfect also.
I know Some people have this Grand though to figure a 100LBS recipe. WHY WHY WHY is all I have to say DO YOU THINK CHS made the OR Recipe with 100LBS in Mind and said OH In 100LBS I will need 20 2OZ containers.
Lets Get Real and Work to a reasonable Smart assumption of Common Sense.
A cup of all-purpose flour weighs 4 1/4 ounces or 120 grams.
16 tablespoons to 1 cup
1 LBS of Flour has 3 1/3 cups of Flour = 400 grams
It takes 1Lbs of Flour Seasoning to coat 10 pieces of chicken
PEOPLE NEED TO THINK LIKE CHS did in 1939 if you cooked 1 whole chicken and you had some seasoned flour left over it was used in the Crackling Gravy and you cleaned the Bowls NO waist.
3 1/2 cups of flour or 400 Grams is what fits amounts for 1 Chicken in 1939 and 2021 DO THE MATH at a 12% Seasoned Flour stick amount with chicken to Milk n Egg Warsh
When Cooking in Fat, Lard, Any oil ANY COOK with a Brain knows the Cooking Oils absorb the Seasoning and the Flour. Example ask the Cooks WHY DID or does the Oil turn Red and Why Does the Oil turn Red when you add Red Pepper and Cayenne ? ? ? Its Not food coloring its old fashion absorbing.
We had a BBQ last night and started to Deep Fry the Chicken in 1960's Pressure Cookers. I had NOT cooked a piece of chicken ONLY heated up The Old Oil from the WOW IT SMELLS GREAT.
I said something like CHS would its Going to be the Best Dang Chicken you will ever eat Wait until the chicken wings you taste. DID NOT tell them there were no chicken wings in the Cooker yet had them is suspense. When I gave them the first chicken wings ALL I said was they taste Better then what you smelled 15 minutes ago KNOWING DAM well ALL they smelled was the Heating OIL like you smelled from a KFC in the 1960's
OH and if you do a simple math 400 Grams and Add 100 Grams of Spice it MIGHT just be Dam Good Tasting Chicken ?
Not sure where 100 Grams of 11 Vegetable, Herbs and Spices would fit in Any Picture BUT simple MATH
