Red Pepper ?
which Red Pepper many people say Red Pepper is Red Pepper Cayenne. Which is wrong.
Its Dehydrated Sweet Bell Red Pepper Flakes which were very common in the 1940's.
They had Sweet Red Pepper Flakes which were mixed with Cayenne it was called Red Pepper and Cayenne which is not pure cayenne.
when used it gives a red color and unique flavor that is not hot like Cayenne.
Sweet dehydrated red pepper flakes try grinding them but freeze them prior to grinding as you don't over heat the dehydrated Flakes or use a way to crush them without over heating a sifter or Mortar and Pastel works best. using high speed grinder takes out many oils that are in spices and you loose to much aroma and flavor in the high speed grinders

Yes have tried it and it definitely makes sense in the KFC original recipe. it is a more lingering flavor that you don't get with chili peppers.
I have tested the red pepper and cayenne and its also different then straight cayenne red pepper.
I have been testing a item which I have never seen anyone use it KFC recipes and will give a update once I get feed back from others first, I do not want to send people on a goose chase without doing a better test.
I would suggest trying the Bell Red Pepper.
Have you seen the photo from 2017 Canadian KFC which shows 11 dishes of spices and herbs ?

Yes, I have seen the picture, but I'm not completely sure if they are going to show a picture of the real spices, may be they are just playing in a marketing game. Do you have more info about the picture? Did they say those are the real spices? Regards!

There is speculation it was made from a Canadian List of original recipe, which some of the owners in Canada had received from Colonel S.
The items that are in the Canadian Photo differ from the 11 Vials in the KFC Vault. The Time discolored the vials and the Pea trays in the Canadian 2017 Ad were new spices. I do not know if KFC was ever asked about the photo and to say if the spices are the 11 Herb and Spices.

Hi, I'm investigating about other recipe people's are saying is close, seems very popular and uses red pepper. (Ken's v7)
I'm only able to find pink pepper and I'm not sure if it's the same as red.
Any idea?

You need Dehydrated Red Bell Pepper not Red peppercorn.
yes you can grind red peppercorns for flavor but Dehydrated Red pepper is different ?
you can find it in some bulk stores who sell spices McCormick's sell it.
the Red Bell Peppers are a vegetable not Pepper like Cayenne or other peppers

Thank you but late, I bough Red peppercorn. Let's see what happens.
It's going to be quite difficult to me find the other one in my country, probably I can get it from US but in a month.

FYI Ken's v7 recipe uses it:
3g MSG
3g white pepper
2.5g black pepper
0.5g sage
0.5g coriander seed
0.375g ginger
0.25g red pepper flakes
0.25g clove
0.25g allspice
0.125g marjoram
0.125g summer savoury
0.125g thyme
