Brine or Marinade is critical even Buttermilk Soaking I was thinking of rubbing some of the H&S with a bit of salt onto the chicken pieces. Then covering them with buttermilk.

rub them with Oil Sprinkle them with Herb and Spice and Brine in Buttermilk

Given the information which I detailed above, naturally fermented Soy Sauce seems to have serious brining potential.

I have marinated beef before in Soy Sauce. It did wonders for tenderizing the meet. But even after rinsing the meat well. I could taste a hint of Soy Sauce. I did leave the meat in the soy overnight for the next day's dinner.
