In the 30's and when C.H.S went on the Road selling the concept of K.F.C.
He Drove from location to location and slept in His car.
He carried a 50 lbs tin of seasoning in a old Lard tin
He had to supply the Chicken as many locations were Burger locations and DID NOT have Chicken.
He carried the Chicken in a Ice Chest in Ice Water which was a Brine or the Chicken would have spoiled.
C.H.S knew the Chicken had to be preserved and Brined as He could NOT afford to throw it out?
The Brined Chicken also retained the Moister which Helped in the Frying Process if you have read stories C.H.S. when skillet frying the chicken He added water don't the skillet and covered it when cooking for the steam.
