I'm using 5 cups of vital wheat gluten. Everyone else should use 5 cups of soft wheat flour. Such as Cake or Pastry flour.

Oops, the red pepper should read: 14 grams Paprika & 3 Grams Cayenne (or) Tabasco (totaling to 17 grams)

The elusive missing 13 grams winds up being MSG. This seems quite logical. CHS was rattling off H&S to Winston, and MSG wasn't part of his original original recipe.

It should be noted that the above recipe is Celery intense. Appx. 4 grams of dehydrated Celery Leaves, Stalks, and/or Celery Seed reside within 20 grams of Celery Salt.

Alternate instructions: Make up 100 grams of the mix as seen below the dashed line. Add 2 level measuring Tablespoons of this seasoning mix per Metric Cup of flour. Plus also add 1 level Tablespoon of Flour/Baker's Salt per Metric Cup of flour. Should coat 10-12 mixed pieces of Chicken. Warning: Flour/Baker's Salt weighs only about 5.4 grams per teaspoon (or ~16 grams per tablespoon). Table Salt weighs about 6.62 grams per teaspoon (or close to 20 grams per tablespoon). Be sure to use Flour or Baker's Salt.
Edit: The weighing instructions method is vastly preferred over this volume method.
