There are more types of sausage than Italian and breakfast sausages. Agreed. But starting out as a novice, I'm thinking that Breakfast Sausage is a good entry point for newbies, particularly if they love North American style breakfast sausage as much as I do.

flg, your recipe seems well under-seasoned compared with the first 6 or 7 recipes that popped up via a web search, but I think you took the correct approach in starting with a low level of seasoning. It should be easier to add seasoning than to remove it.

I think you will be surprised. Mix what I posted in about 1 pound of pork. Plenty seasoned

Did Sell Brown and Massey other recipes for Beef and Sausage for the BBQ Franchise prior to the Chicken KFC.
Some items were sold in the BBQ Franchise and the Pig outlets Brown and Massey Tried and KFC tried.
C.H.S. Father was a Regarded Butcher also Prior to His death while Harland was a wee lad.
