What is the Note ?
Many have describe the Note as the Aroma of the K.F.C. Chicken.
So my opinion and comments will be Based on Aroma.
I have Explained this Message before that There was 1 Major Occurrence while Preparing the Pressure cooker on a event and shown the Younger Grandson what needs to be done. He always Loves Helping and a Smart Little man for age 9 at the Time.
As we were warming up the Oil in the Pressure Cookers 1 Pressure Cooker which we started with to Season the Other pressure cookers and Make Gravy was the Beef Tallow which contained the Slurry. Which we started to Heat Low and Slow. As the Pot started to Heat I slowly showed how you safely stir the Fat and warm it up. It was at this Point while the Temperature started to increase, The aroma started to increase WITH ONLY THE FAT heating up.
The Aroma what starting to Become so intense People who were coming into the Back area were ALL saying what Smells so Great and Unreal, my young Helper was always saying Nothing we have NOT cooked yet ? He was 100% correct.
It was at this point we filtered Off the First Oil into 2 other Pressure Cookers and started cooking down the rendering slurry for the Gravy, This split the Aroma intensity down some. BUT as the Gravy started to Cook you had a Aroma Build again like the Aroma from a slow cooker as the Time increases.
The Pressure cookers with the Filtered Fat and added Beef Tallow started to warm up to cooking Temperature. with a Lower Aroma, until the Seasoned Flour Chicken was Cooked and it Intensified the Aroma as Batches continued to Cook.
AT this Time the Major Ingredient's we were using was Fresh Pepper Black, Red, White, Sage, Poultry Seasoning, and heavy Celery, Garlic, Onion Granules Powder, plus other ingredient's But also the chicken were a Range Fed Chicken with Great Flavor also, Meat and Fat.
On other Occasion where FRESH Beef Tallow was used with little Slurry the Aroma is NOT as Intense very small.
Back in the early 70's The original K.F.C. Building still vented Out the Walls Hood Venting and NOT roof top Air make up units.
While Cooking these occasion it quickly became apparent that the Aroma can be misleading in some ways if we chase the Aroma First as it's more the product of continual cooking which is NOT as relevant with Home cooking but will be there on a lower amount.
